Crustless Cranberry Pie
This pie is delicious! I made a few tweaks when I made it - I'm allergic to walnuts, so I added almonds - I figured they would work well since there was almond extract in the orginal recipe. I also added some golden raisins that I had soaked in hot water for a short time. The pie turned out great! It is even good cold the next day with coffee - I am sure I will make this again and again, and will probably try it next time with no nuts at all! Great dessert - with many options - it would work wonderfully at brunch with coffee and eggs! Yum!
