Vegetable-Stuffed Portobello Mushrooms

I've been making stuffed portobellos for years in a similar fashion. The recipe changes every time based on what I have on hand. Last time I used about 3/4 cup leftover cooked basmati rice, sauteed summer squash, zucchini, tomato, onion, garlic, about 1/2 cup breadcrumbs, and 1/2 cup chedder cheese. I also like to add 1 beaten egg to help it all hold together. If you don't have time to marinate, drizzle the mushroom caps (stem side up) with a little balsamic (not too much, it can be overpowering) or soy sauce and bake for about 10 mins before topping with the stuffing.

Downeast Maine Pumpkin Bread

The best pumpkin bread I've ever tasted! Only thing I changed was used 1 cup brown sugar and 2 cups white, and glad I did. Made 2 loaves and a dozen muffins.

Blackened Tuna Steaks with Mango Salsa

This recipe is absolutely fantastic! Husband was very impressed as I had never attempted tuna steaks before and they came out great. They steaks came out med-rare which was perfect for us. There was just enough salsa for the two of us, so if making for more than two, I would double the salsa. Next time I will reduce the spice mixture as I threw a lot away.

I loved this recipe for the quickness, and it's easily customizable too. Definitely need to add more spices than what is called for to liven it up.

Gingery Quinoa-Stuffed Acorn Squash

I only give this 4 stars because hubby wasn't crazy about it, but I thought it was fantastic. I didn't have any fresh ginger on hand so used powdered, but can't wait to try it again with the real stuff -maybe when he's out of town ;)

Jammin' Tarheel Chili

The best chili! I like to use a smokey porter, the beer adds a great flavor. I also add jalapeno (we like it hot too) and leave out the mushrooms. Always a hit!

Apple Stuffed Chicken Breast

I will definitely be making this one again. I was out of wine so just used water with some of the leftover apple chunks thrown in. It made a great sauce to drizzle over. Also: I added about a tablespoon of apple sauce to the stuffing. It was essential to getting it all to hold together.

Black Bean Lasagna

We absolutely loved this! After reading the reviews I was hesitant to try the warm guacamole, but I am so glad I didn't leave it out. I did use 1 more avocado than it called for, and still thought it could have used more. Great with a little extra hot sauce and a dollop of sour cream!

Robin's Quinoa with Mushrooms and Spinach

I loved this recipe and surprisingly, so did my boyfriend! I followed the recipe, but I did end up with a lot of extra liquid after I added the mushroom mixture, but that was no problem to cook off. I also added some chopped bell pepper with the onion in the first step, which I thought gave a nice compliment. I thought the wine flavor was perfect. I will definately be making this one again.
