Baked Spaghetti Squash Lasagna Style
Cheesy goodness. I baked it in a pan thanks to the suggestions of other reviewers. It came out of the oven sitting in more juice than I had expected, but it acted as a nice sauce. Great low cal alternative to traditional lasagna.

Cucumber-Tomato Sauce
I was expecting an Italian flavored sauce that I'd throw in the freezer. What I got was an amazingly flavored sauce with a Thai flair! Something in it - maybe the cucumber seeds have the consistency of ground nuts. There is a slight heat to it, as well. I envision using it as a marinade, a sauce or a dressing. It's delicious.

Thai-Style Tilapia
Delicious sauce! I didn't have lemongrass, so I used lemon basil. Next time I'll try lemongrass, just to see the difference - but I certainly wasn't disappointed. I took others' suggestions about doubling the sauce. Great tip. While it increased the calories of the dish, it was worth it.
