Baked Chicken and Zucchini

I cut the chicken into smaller pieces to suit my children better. I also chunked the zuccini, coated in olive oil and didn't saute. I added Italian seasoning to the bread crumbs. I upped the amount of fresh basil by quite a lot, since I love basil and I have a massive plant. I also did not use the cheese as I don't eat dairy, but it was great without. My entire family loved every bit!

Peanut Butter Chip Chocolate Cookies

My son suggested both peanut butter and chocolate chip cookies, so I made these with both. I made a double batch because the recipe said it makes 2 dozen, well that was a miscalculation! I ended up with 8 dozen! Thankfully it was for a 4th of July party and they were spectacular! They stayed soft and didn't lose their flavor over the 3 days it took to eat them up.

Coffee Marinated Steak

Delicious! You would never guess there is coffee in this, and I even used espresso. I didn't have sesame seeds and I cut the soy sauce down to 1/2 cup. I have never eaten an entire steak before, but this NY strip was so good I ate it all!

Tuna Noodle Casserole from Scratch

This isn't my mom's recipe! I've had an aversion to the ol' stand-by version using canned condensed soup. My kids (6 & 8) loved this, too, so much they asked for it for their bedtime snack! I accidentally used more pasta, the box was 12oz instead of 8 oz, and it was rotinni, but it was an excellent substitution. I also used part peas and part brocolli, which was excellent. I think the key is quality ingredients. I used high quality tuna and organics for the rest. Can't wait to eat the left-overs tonight!

Zippy Shepherd's Pie

This is the best shepherd's pie I've ever made, or eaten. I did use tomato paste instead of the tomatoes, though. But the flavor was delicious, and the consistency of the sauciness was just right with the paste addition. I like that you only need to use the broiler for a few minutes rather than baking it.

Shipwreck Stew

I found this recipe because I was looking for something to combine the ingredients I had on hand, one being left-over brown rice. That being said, I obviously substituted the cooked rice, and I think I added significantly more than the recipe would have called for, maybe 2 cups I'm guessing. As other reviewers noted, it takes longer to cook; even at 375 degrees I had it in at least an hour and a half before the potatoes and carrots were done. I also added 1 tbl. crushed garlic and miscelaneous herbs like oregano and sage. The taste was delicious and even my little guys who aren't keen on casserole-type dishes ate a plate full. I will definitely make this one again, but will plan to start it much earlier next time!
