I'm a 46 year old mom & grandma. I moved to North Carolina to get married and help with my fiance's corporation. We are bikers and our business has to do with motorcycles which is really cool. My new 'ol man was a bachelor for awhile and a little on the thin side. He wanted me to fatten him up sooooooo I get to do alot of baking which I love.
My favorite things to cook
Cake! I love to bake and decorate cakes. Other favorites would be cookies, pies, any kind of deserts. Yummy homestyle meals are a favorite also. Anything that makes people go woooowwwwww this is so good!
My favorite family cooking traditions
1. Big fat Thanksgiving and Christmas dinners that make the guests have to undo their belts and take a nap! 2. I have always made creative and fun birthday cakes for my kids and grandkids.
My cooking triumphs
I was 18, pregnant, poor, and all by my little self. I tackled my first Thanksgiving dinner with no assistance and it turned out great. I've built upon my knowledge every year and now it's a mega fandango. It's so much fun to do! I always look forward to it. I also made a doll cake for my daughter that was a hippie chick. It turned out fantastic. It was a real hit.
My cooking tragedies
Ooooohhh my kids love to tell some funny stories about my cooking tragedies - one of the favorites was when I made tacos with what I thought was some taco seasoning I had in an unmarked jar. What I failed to realise was what was in the unmarked jar was cayenne pepper and I had used lots of it! All the guests were sweating and choking. I cried and everyone else was laughing (after plenty of water) haha. Another one was the exploding cake. I was making a wedding cake and I don't know what went wrong but when I opened the over to check on it the batter blew outta the pan all over the place. My daughter was hysterical with laughter. Awwwwww the good 'ol days!

Wilted Lettuce
I used red onions instead of the green, fresh romaine lettuce from our garden. Easy to make and fantastic taste - I couldn't stop eating it!

Potato Salad I
Lotsa people get weirded out over potato salad. Everyone has their preferences, but this is a great "middle of the road" recipe that should please most. This was very easy to make - loved it.

Chicago-Style Pan Pizza
Excellent! Tastes just like true Chicago-Syle. I was scared it would be soggy so I used a 10" spring form pan so I wouldn't have to dig it out of the pan, but not necessary, it wasn't soggy. The ol man raved about this dish and he's very picky!
