Poor Man's Shepherd's Pie
Great dish for kids to help with. This is one of my favorite dishes from childhood. Flexible too, I have always used yellow onions instead of green. The missing ingredient here is to put crunchy chow mein noodles on the top for the last part of the baking process. We always made it with the noodles on top and it really seems naked w/o it! This casserole is not elaborate by any means but if you want simple comfort food I think this is the greatest!

Zucchini Brownies
We followed the recipe exactly and it was cake, not brownies. I'm not sure how people are using this recipe as is and coming up with brownies. Maybe we'll try again somehow. The cake was good but since we wanted brownies I'm only giving it a three star rating.

Blueberry Zucchini Bread
We have made this recipe so many times and will continue to do so. I do make changes each time and will continue to do so as cooking for me in an individualized moment-to-moment experience! To make it healthier we use whole wheat flour, add some walnuts, cut the sugar in almost half and often times we use maple syrup instead. We generally make it into muffins and ALWAYS add a yummy oatmeal & walnut streusel. The great thing about this recipe is it is a versatile,fabulous foundation from which you can make it your own!
