Chicken Lo Mein
Our whole family enjoyed this recipe very much. With two of us working, it went on the table about as fast as I could boil the water. We also made changes in the vegetable types and amounts. I used 1/2 head broccoli chopped very small, 3 carrots bias sliced thin, 1/2 lb sugar snap peas, one whole onion sliced in crescent shapes and 2/3 bag coleslaw mix at the very end when I was adding the oil. The flavor was very mild so all our children enjoyed it. As we were short on time, we paired this with store bought egg rolls and had a quick easy dinner.

Fettuccini Tomato Rustica II
Recipe was quick and easy which is a plus on a busy night. I only used a couple tablespoons of oil and chopped up some leftover grilled chicken. I also threw in a half a can of artichokes and omitted the tomatoes as I was out. I added a couple ladlefulls of the pasta water at the end to the mixture and while the pasta drained, threw the mix into my heavy (and still hot) pasta pot helping to reheat the whole mixture and making this a one pot meal. The family loved it, I felt good about the fat content, would even grate some zucchini in next time.
