Ukrainian Red Borscht Soup
Wow wow wow. The recipe is so easy to follow and the results are pretty unforgettable. I enjoy my soup on the chunkier side so I diced the beets and I switched out the potatoes for some cooked pasta. I served it hot for dinner last night and served it cold as an addition to brunch. Bravo!

Beet Salad with Goat Cheese
Dressing is very tasty. I opted to use seasame oil, some herbed goat cheese and I candied sliced almonds instead of walnuts

Watermelon Gazpacho
Great taste however Its definetely more watery than I would like. I tried it with less orange juice, cilantro, and try only processing half of the watermelon and dice the rest along with half of a cantaloupe
