Jazzed Up Couscous
This was a good recipe, considering I have never attempted to make couscous before. I added some fresh basil from my garden and salt and pepper to taste. The kids gobbled it up....with 2nd and third helpings! Very easy weeknight meal.

Chicken Wellington Casserole
Was looking for a quick kid-friendly meal, and it got great reviews at our place. The only thing was that I found the cream cheese mixture too thick, so I added a couple of dashes of milk. In the future, I will take some of the other reviewers advice and at chicken broth or white wine.
