Delicious Beef Tongue Tacos
We have been fans of beef tongue forever. We prefer cold salsa on the side with plenty of fresh lime juice and cilantro. Also, add oregano when cooking the tongue. If you only use a portion of the whole tongue for tacos, slicing up the remainder of the tongue for sandwiches is a heavenly meal, with Dijon mustard and maybe a little mayo. This is 'poor peoples' food, but you wouldn't tell it from the price. BTW, smoked tongue is the greatest!

Homemade Albondigas Soup
This is one of the ultimate Mexican comfort foods and you don't have to be Mexican to enjoy it! It is food fit for royalty and the common man alike. It ranks right up there with your Mama's chicken soup. It will cure anything, even baldness. Eat it hot, add hot sauce or hot chilies or menudo mix or chilipiƱas to spice it up if that's your style, with warm corn tortillas on the side, and you will find yourself in heaven! My dear mother-in-law made this for me whenever we visited, and she will forever hold a special place in my heart. My wife made a special point of learning how to make this (and other great recipes, and it has contributed greatly to a happy and lasting marriage. It is true that a woman's way to winning a man is through his stomach ... and it is a man's way of gaining a woman's love is to appreciate her cooking and her efforts to please him. Which is to say that it is a two-way street. Try this recipe, you'll enjoy it!

Brown Beans
This is a great dish. Add a tablespoon of garlic powder or dried ground garlic in step 2. We also serve it with medudo mix spices on the side for those who wish to spice it up a bit. Warmed corn tortillas are also good for an alternative to cornbread. This meal will leave you in a feeling of euphoria, and you will want to take a nice nap afterwards.
