Savory Kale, Cannellini Bean, and Potato Soup

I made two changes to this recipe. One, I added chopped summer sausage during the 'saute onion' stage, and two, I left out the cannelinni beans (the SO doesn't like them). It came out very, very good, and reheats very well for a tasty and simple lunch! My favorite potato and kale soup recipe so far!

Marie's Easy Slow Cooker Pot Roast

Absolutely wonderful! Only change I made was that I added garlic - lots of garlic - oregano, and rosemary. Came out very, well I think.

Wild Mushroom Puff Pastry

I made quite a few changes with this based on what I had in my kitchen. I used onion instead of shallots, oregano instead of thyme, and butter and milk instead of heavy cream. Still, it turned out great and my boyfriend and I both loved them! I'd like to try it with regular pastry, since I had a problem keeping the puff pastry closed, but the puff pastry is SOOO tasty!

Turkey Pot Pie

I loved this. I used a marie calendar's pie crust, and subbed grean peas for the celery (my boyfriend doesn't like celery). The turkey I was using had a maple marinade (left from thanksgiving). My boyfriend loved it; he had three slices! I loved it too. It was flavorful and a great way to use up some of my leftover turkey.

Blackened Chicken

I baked the whole thing and just did away with the skillet. It was easier and baking generally tastes a little lighter to me. I also used more pepper and substituted oregano for the thyme since I didn't have any on hand. It was a very taste dish!

Rice-so-Nice

I wasn't sure what to expect of this since it was very different than anything I had ever cooked before, but my boyfriend and I loved it. It was very homey and tasted a bit like southern cornbread dressing for some odd reason. I used fresh mushrooms, since I think they always taste better.

Lentil Chili II

I loved this recipe, but I don't like cooked carrots and my bf doesn't like celery so I substituted corn and small cubed potatos. This might sound weird, but it was really tasty and gave the chili a little more volume. It gave me a great excuse to cook my red lentils! I would also say that (being born in Texas and having a deep love of spicy things) if you want a spicy dish you REALLY have to amp up the spice. I used about triple the chili powder and cayenne pepper and red pepper and black pepper than the recipe calls for. I tasted it after initially putting in my spices and couldn't taste anything but the tomato. Still the base of the recipe was a great idea; I'll certainly be cooking it again. Note: add a good crusty, warm french bread for a real homey/happy dish!
