Love quick and easy meal ideas. I have 2 sons that are very different and picky about what they eat. It is a nightmare to feed these 2.

Janet's Rich Banana Bread

This was delicious. I made the variations that naples suggested. Use a larger loaf pan though. My banana bread was overflowing. Delicious.

Funky Enchilada Casserole

I really liked this recipe. I think it could use a bot more spice but otherwise it was really good. Don't use corn tortillas. Use tortilla chips.
