Zucchini Cobbler

I needed to find some other recipes to use up the abundance of zucchini in my garden and WOW this is a wonderful recipe. Just remember to remove all seeds and slice very thin that gave me excellent results.

Excellent recipe! Everyone loved the bread! For the Holidays I will add a little clove, nutmeg, and ginger for a spicy bread.

Chocolate Pound Cake III

Reviewed: Jan. 22, 2009
Wow!!!!! Very moist. I made this pound cake with no ingredient changes. I did how ever bake it at 285 degrees for about 1 hour and 30-40 minutes. I added 10 mins at a time after it baked the first 1 hour and 20 mins. and I kept checking for doneness. Well worth the effort and wait. Absolutely no burnt chocolate taste or bitterness from over cooked chocolate. I had many request for this cake and was asked to make one for my husband's small town cake auction for a local charity. You've got to try this one.

Pecan Pie V

Reviewed: Nov. 25, 2008
WOW!!!!!!!!!!!!!!! My kids and husband loved it. I baked three that Monday before Thanksgiving and planned on freezing them until Thursday morning. Well, all gone before Tuesday and not even a crumb left in the pie tins. I had to bake three more. ******** I love pecans so I put 1 1/4 cup of pecans in each pie. I started the recipe with room temp. eggs and I DID NOT super pack the brown sugar (I just made sure it was a full cup by LIGHLY packing) and baked the pies at 350 for 15 mins. Then 300 for 55 mins. Now we can have pecan pie more often, since the ingredents are a staple in our house. A very wholesome but yet delicate pie and definitely a must try.

J.P.'s Big Daddy Biscuits

Delicious biscuits. I followed the recipe and I didn't overwork the dough. They came out great everyone enjoyed them. I made another batch and added a little more milk to make the dough wet and I made drop biscuits one morning. Those were excellent as well.

Valentino's Pizza Crust

Reviewed: Aug. 26, 2008
An Absolutely wonderful crust! I finally bought a couple of pizza stones. (No need to prebake for 5 mins)I just sprinkle a little course cornmeal on the preheated stone and make the pizza. (Original review: Before I had the pizza stones.) Okay! I have a family of eight. This pizza dough was QUICK, EASY, and DELICIOUS. I followed the recipe exactly, anything I added to it was after I made the dough. (Next time I will add some spice to it when mixing and I'm pretty sure it will turn out great.) This dough takes on any flavor/spice well. I did a cheese stuffed crust pizza, two regular pizzas and a garlic crust pizza. Yummy! I did place my crust in a heated oven for 5 mins. I did the same thing with the stuffed crust also. I then finished making up the pizza and baked it for 15 mins. Everbody loves this pizza crust. (The dough will seem sticky after you mix it together. DO NOT add more flour. Just let it stand for 10 mins. Then just put a little olive oil on your fingers and work the dough into place on you pan.) This one is a keeper.

Grandma VanDoren's White Bread

Reviewed: Aug. 16, 2008
LOVE THIS BREAD!!!!!! My family is crazy about this bread. Wonderful texture, excellent taste. Number one in our book. A must try. Update: I make 12 loaves of bread on my bake days. I also shape my loaves and freeze them after the second rise, they bake up well after being frozen for a few weeks. Three of the loaves I go ahead and cook, after cooling I preslice them, put them in plastic freezer bags. I freeze the slices and take out what we need as we go along. The slices thaw quickly, taste just like they were freshly baked, and we never have stale wasted bread. I recommend freezing what you don't eat.
