Eggplant Parmesan
Very delicious and fresh tasting. Even my husband liked it and asked me to make it again. Not hard to make either! My only change was to switch the mozzarella to provolone because I prefer provolone. Will definitely make this again soon!

Aimee's Quick Chicken
This is my new favorite way to cook chicken! So flavorful...yum! It's become my "go to" meal when I have left over bacon to use up. My only change is to use cheddar instead of Parmesan. Thanks for sharing Aimee!

Drop Biscuits and Gravy
I only used this biscuit recipe (used my mom's milk gravy recipe with it) but it was great! Just like the drop biscuits mom used to make as a kid. So quick and easy too! I will definitely be making these biscuits often!
