PBM Sandwich

Here's my take: I spread peanut butter on the bread, top with marshmallows (not the creme) and pop in the toaster oven. It gives the bread a nice crunch, makes the peanut butter gooey and gives the marshmallows a nice campfire feel. With my adjustments I give it a five. Great comfort food. Yummo!

Amy's Cilantro Cream Sauce

I made this yesterday to go with the Southwestern Egg Rolls. Both were excellent! Beautiful fresh flavors with just a hint of heat. I can't wait to try it on other things. The only thing I changed was to use 1 tsp celery seeds and 1/4 tsp salt because I didn't have celery salt. Kudos!

Southwestern Egg Rolls

Absolutely delish! I've been wanting to try this for a couple of years and never seemed to get the chance. I used olive oil due to preference and substituted cilantro for the parsley since I had cilantro on hand for the dip (Amy's Cilantro Cream Sauce this site)and used colby jack instead of plain jack cheese. I wanted to try them deep fried and they were wonderful but I will probably bake next time just because it's healthier. Great recipe; thank you.

Spicy Sweet Potato Salad

I really wanted to like this but I made it for Thanksgiving and most of it got thrown out. I don't know if everybody is just hung up on my standard potato salad or if it was the curry (which is the strongest flavor in the salad) but it just didn't fly. I didn't think the sweet potatoes and the curry were complimentary. I'll keep looking for a favorite sweet potato salad. Thanks anyway.

Carla's Fruit Dip

This is excellent! It doesn't taste like cake icing at all (as someone said earlier). The cream cheese keeps it from being too sweet; it's just right! We loved it with fresh pineapple, strawberries, kiwi and yellow apples.

Twenty-Four Hour Salad

This was gobbled up by two families over Christmas. I made it for my hubby's family on Christmas eve and they loved it. It had only had about six hours to "sit" before dinner but was still very good. We had it again the next day and it was excellent also. I made a couple of modifications due to preference. No celery, as hubby and step-son don't like it. Used real bacon instead of bacon bits. And topped with sliced boiled eggs. We loved it.

Pumpkin Roll II

I've made this twice during the holidays; once for the family Thanksgiving dinner and once for my hubby to take to the office Christmas thingy. Both times it was gobbled up. Everyone seemed to love it. I thought it was very good. I used pecans instead of walnuts because that's what I had in the house. It's not diffucult to do and makes a pretty presentation.

Jalapeno Popper Spread

I made this last week for my hubby to take to an office Christmas party. It received rave reviews. Served with "Scoops" tortilla chips. I didn't get to taste it but everyone loved it and only one person said it was "hot". I'm sure when I make it for just us, I'll add more peppers to make it a little warmer. :-)

Olive Salad for Muffalettas

I guess I'm going against the flow here but something was just too overpowering in this. I think maybe it was the oregano, so I'll try it again with less. On a positive note, I took this to our Thanksgiving dinner and my sister thought it was really good.

Grilled Peaches and Cream

Just getting around to rating, but we had these on a camping trip several months ago and they were very tasty. Be sure to use good ripe peaches because the honey doesn't add much sweetness. I tend to agree with another poster who said added cinnamon sugar would be the finishing touch. But my hubby loved as is, since he is a diabetic.

Grilled Pineapple

I thought these were excellent but then I love anything with some heat. Lol. We grilled these on a camping trip several months ago and I'm just getting around to rating them. A unique twist but I thought the hot sauce gave these just the right amount of punch. Not too hot...just right. We just had them for a simple dessert, but I think they would also be great with pork or chicken. Perhaps on a grilled chicken sandwich?

Eggnog French Toast

We had this last weekend with the Buttermilk Syrup from this site and it was sooooo good. The eggnog flavor is very mild. Hubby said noone would know if you didn't tell them, but I did catch a hint of it occasionally. We loved it but I think the syrup made it so much more special. Yum.

Buttermilk Syrup

Super! My mother always made homemade syrup and I've never found any at the supermarket that compare...even "real" maple. But I have to say, this is even better than hers! My hubby and I loved it; although it will have to be an occasional treat because he is diabetic. We had it with the Eggnog French Toast from this site and it was memorable.

Orange Cream Milk Punch

I thought this was good but it tastes more like a milkshake to me than a punch. I love the "orange cream bar" flavor and think it would be great to make it less "liquid" and serve as a milkshake but it wasn't that great as a punch for me.

Jamie's Cranberry Spinach Salad

This is another one of those dishes that is sooooo good. My family likes to try new dishes on the holidays and a couple of years ago I made this. My sister immediately asked for the recipe and makes it for herself although she lives alone. I've made it several times and it is tangy and delicious; best served immediately as it's not quite as tasty after it sits.

Chicken and Broccoli Braid

I made this for Thanksgiving. It was beautiful and is not as difficult as it may seem. I used the "recipe creations" crescent sheets (they are a solid sheet instead of cut into triangles) and this made assembling the braid a lot eaiser. The leftovers were good for lunch the next day. I did use fresh dill instead of dried (probably 1/8 cup). Very tasty!

Grilled Bacon Jalapeno Wraps

I actually get cravings for these things. They are wonderful! How can something so simple taste so good? I've done them under the broiler when we didn't want to start up the grill. Of course, the grilling adds that smoky flavor that is just awesome, but both are good. If you chill them again after they are wrapped and then start grilling the cut side first, the cream cheese is less likely to ooze out.

Alyson's Broccoli Salad

My family loves this salad. We make it for special occasions and it's gobbled up. I like using the red onion so that it is visible and easy to pick out. I like the flavor it gives the salad but onion hurts my tummy. Definately use real bacon; it's what makes the salad. I sometimes substitute craisins for the raisins (I prefer the craisins...depends on what I have in the house). I'm planning to make this again for our Christmas dinner this year.

Taco Seasoning I

I can't tell you the last time I bought a taco seasoning packet! This is excellent. I make a big batch and store it in a pint jar, using 2 tbsp. per pound of meat. I use it for tacos, fajitas, and homemade refried beans. My family loves it; my step-daughter requested a Mexican feast for her birthday dinner last night.

Eclair Cake

My step-daughter requested this for her birthday dinner yesterday; it was excellent as usual. I always use french vanilla pudding. It's such a quick, easy dessert and we love the creaminess and of course the chocolate. It can be made healthier by substituting sugar-free pudding mix, low-fat milk, light cool whip and the new reduced sugar icing.
