I am retired and love to cook. My husband and I eat vegetarian but do include fish. I enjoy entertaining and trying new recipes as well as old favorites.

Pumpkin Parfait
I made this for guests and everyone loved it. I did take another reviewer's advice and used the large box of pudding mix. I also used 1 1/2 teaspons of pumpkin pie spice. I topped it with a little coolwhip sprinkled lightly with cinnamon, finely ground ginger snaps and chopped, toasted pecans. It was a nice presention and so delicious. This is a keeper!

Fluffy Pancakes
Great recipe. I add chopped walnuts to the batter and a little cinnamon. In the fall, I add about 1/3 cup of Williams Sonoma's Pecan Pumpkin Butter. What a treat! During blueberry season I add blueberries to the walnuts.

Cod with Italian Crumb Topping
This is a keeper. I soaked the fish in milk for 30 minutes to get rid of the "fishy" smell since I was having picky eaters over for dinner. I minced toasted walnuts and added them to the mixture and omitted the corn meal. I also added some fresh herbs that I had growing - oregano, basil, thyme - instead of the dried herbs. My husband and I love it. It will be a way I will fix fish again. Any kind of white fish works well. I used Talapia and another time I used File fish. (Or is it Tile?)
