Quick Quiche

Holy cow this quiche is awesome! Whenever I try a new recipe from allrecipes.com, I ask my husband to rate it on a 5-star scale. He gave this one an 11. A few adjustments I made - I used elk summer sausage instead of bacon because that's what I had. I also threw in some canned drained mushrooms and chopped bell pepper. Another time I made it, I threw in broccoli, which was good too, but I liked the mushroom/pepper combo better. Thank you thank you thank you for this awesome, quick, flexible, nutritious recipe!

Easy Vegetarian Pasta

Unlike most others that made this recipe, I thought it was rather bland. I thought it needed more vineagar or salt or something to give it more flavor. If you're going to make it, I'd take the recommendations of others and add spices and/or more vineagar.

Oatmeal Raisin Cookies IX

The dough looked like it wouldn't hold together, but it worked out fine! Nice and moist. I also substituted half of the oil with applesauce. I didn't have any nutmeg, so I put in a dash of cloves instead. I got several compliments on how good the cookies smelled. These were relatively healthy (as cookies go) and not too sweet. I will definitely be making these again!

Add onion, garlic, oregano, a pinch of basil, seasoned salt, and a dollop of sour cream, and this is a real winner!

Broccoli Cornbread

Like most other people, I was surprised by how good this was. It's a nice variation on plain, old cornbread and a good way to get a few more veggies in. I used low-fat cottage cheese and used veggie oil instead of margarine (I went a little scant on the oil). It was great!
