My favorite things to cook
My very favorite is dessert baking but I love to cook just about anything. I experiment and try new recipes all the time. Living in Mexico has given me access to all kinds of new ingredients and I'm learning to cook real Mexican food.
My cooking tragedies
I once made a fish stew that even the dogs and cats wouldn't touch. It was my first year of marriage, of course.

Southwestern Egg Rolls
I really love this recipe. I did cut back on the jalapenos but added a tbsp. of chipotle-flavored hot sauce. After I'd mixed everything in but the cheese, I felt that something was missing. I added 3 tbsp. of chopped cilantro and it really added just the right flavor. I'd better state right now that I increased this recipe to 30 servings for a party. I also baked these at 450 for 12 minutes and served them cut in half with Amy's Cilantro Cream Sauce from this site. I will be making these again.

McCormick(R) Spiced Holiday Sugar Cookies
I followed the directions exactly and I added all the required spices, but they still tasted like dry toast. I wouldn't roll them out to the stated 1/8 inch. I will go back to sugar cookies.

Steff's Shepherd Pie
I loved this recipe and so did my husband. We used a can of mixed veggies, 1/2 can of mushroom soup, and 1/2 'can' of light sour cream. We did mix half the cheese into the meat mixture and the other half into the potatoes. I topped it off with smoked paprika before baking and it was perfect. My husband now plans to make lots of extra mashed potatoes on the nights he cooks. Thanks for the great 'comfort food' recipe.
