Tara's Sweet and Chunky Chicken Salad
The only change I made was sweet relish instead of dill pickle(it's what I had).Really different and delish. Made a huge hit at a ladies' lunch! It's now my go-to standard.

Panzanella Panini
Why didn't I ever think of this before? I make it on ciabetta bread in my Foreman grill, usually add a little onion, and once I used a little leftover pesto instead of fresh basil. Terrific.

Meatloaf with Fried Onions and Ranch Seasoning
I used ground turkey, salsa instead of ketchup, and, because I did'nt have stuffing on hand, I used some seasoned croutons instead. It came out moist and very tasty, something turkey meatloaf usually isn't!
