Beef Nacho Casserole
This was pretty good for a quick meal. I didn't use the corn (not in the mood) and used about one cup sour cream. I think the addition of either black beans or refried beans would be tasty and will try next time. It wasn't thoroughly heated after 20 minutes however and I only got 3 generous servings. All in all, a good dish when time and ingredients are short. Thanks

Applesauce Custard Pie
I was concerned that other reviewers thought this was too sweet so I started with 1/2 cup Splenda and tasted it. It was plenty sweet enough for me so I stopped there. I subbed apple pie spice for the cinnamon and didn't really measure, just sprinkled on top. It was very easy to put together and quite tasty. I will make this again. Thanks.

Low Carb Cheesecake
I found this recipe when I was looking for a dessert to use up a carton of ricotta. I did not use fat-free sour cream or cream cheese and I mixed the filling in my food processor. The texture came out pretty good but don't expect it to taste like cheesecake. Overall, a good "everyday" dessert.
