Poke Cake II
Awesome! We wanted to announce to our family that we are having a baby boy, so I made these into cupcakes and bought blueberry jello to use for the filling. They turned out SO yummy! The only mistake I made was over filling the cupcake liners, so when I went to put the jello on, it overspilled on the side. Just make sure not to OVERFILL the liners if you make for cupcakes! But they turned out SO yummy, and a fun way to announce the sex of our baby! :)

Pumpkin Coffee Cake
LOVE THIS! My frist attempt ever to make coffee cake and I am SO impressed with how it turned out! Best Coffee Cake I have ever had! Based on other reviews I ended up using a cup of pumpkin as well and it was PERFECT! Not overwhelming but just a hint of pumpkin taste. Perfect! I also baked it in a 9X13 pan. I will definately be making this again!

Baked Three Cheese Eggplant
I am new to eggplant.. this is only the 2nd time cooking it, but I LOVED this recipe! And even my 3 year old asked for seconds! So that is a success for me! :)
