Risotto with Tomato, Corn and Basil
Very good! I doubled the garlic and put extra basil in it. I also added about half of a container of sliced mushrooms at the same time as I added the corn and tomatoes...awesome!

Carrot Cake III
Amazing carrot cake, but the recipe makes way too much frosting, in my opinion. I only used half of what the recipe made and it still covered the entire cake with about a half inch of frosting! (but the frosting is delicious!)
