Rhubarb Dumplings
my kids loved these... and they say they don't like rhubarb. Made 1/2 recipe for a test and it was gone in 5 min. and I didn't even get a taste. Then I made a big batch. I got the first one out of the oven. Gone in 10 min. Eat alone or with vanilla ice cream... good any way ya make 'em. (I did use brown sugar because the kids used all the white sugar in Kool-aid)

Zucchini Cakes
I love this recipe. I have made it 3 times. My father was visiting and he thought at first I made salmon patties, then he saw the green flakes. He knew I had used zucchini, but then he asked what kind of fish did I use? 2nd and 3rd time I made with 1 extra egg. Thanks for the recipe, Pat. Love it!! Maybe it should be named Zuchini Moch Crab Cakes and put under side dishes so it is easier to find.

Crispy Mashed Potato Pancake
really liked this recipe- very much like the kind my mother used to make- my mix was a very thin so I added about 1 T flour to dry out. Had to 2 hand flip so they wouldn't break, but once flipped, they held up nicely.Great crispy, crunchy outside to them. My father and I just ate 1/2 the batch, and kids will be home from school to finish the rest. Thank you so much for the recipe, I have been trying different one's and this was the best by far. ( first kid's response was to finish up the rest of that batch) Off to the kitchen to make more for the other children.
