Fluffy Pancakes

This is a great basic recipe! Yummy and fluffy! I use melted, cooled butter instead of shortening. My favourite flavour is bananas and cinnamon! The only complaint is it really doesn't make the quantity it claims.

Shrimp Scampi Bake

We just finished eating this for dinner...amazing! Better than any restaurant. I added salt and pepper, increased the amount of garlic, and used less butter in the sauce. I then threw some halved grape tomatoes, grated parmesan and bread crumbs as per others reviews before placing all in the oven. So wonderful over angel hair pasta with a side salad!

Lemon Coconut Loaf

I made this loaf quickly for my tea buddy today. It's a very light, mildly tart pleasure! I added fresh mashed raspberries to the glaze and garnished the loaf with fresh whole raspberries. :)

Curried Coconut Chicken

Fantastic base recipe!! I added potatoes, carrots, green onions and fresh corriander, drained the stewed tomatoes, subbed paste for the sauce, and decreased the amount of sugar.

Turkey Pot Pie I

Italian Roast Beef I

This was my first attempt at making a roast. It was SO easy. I don't have a kettle so I had to bake at 325. We threw in some baby carrots, halved some potatoes and tomatoes and then made gravy from the drippings. Served it to company; everyone was smiling.

Lemon Pepper Pasta Seafood

Average at best; not enough flavour or sauce to stick to the linguine. My children seemed happy enough to finish it, though they love ANYTHING with shrimp in it.

Baked Dijon Salmon

GOURMET! This is definately something to serve if you want to impress. And so EASY (I love that). There was so much sauce left over after brushing the salmon, so I decided to pour the rest over the fish; the man and the youngin' LOVED it. The kids even asked to eat the leftovers the next day (that NEVER happens with fish)!

Oven Beef Stew

I gave this four stars because of the ease of preparation! Pretty darn easy for a decent meal. I did find the taste a little bland however; I'll have to alter SOMETHING next time to improve the taste.
