Bean and Sausage Rigatoni

I ended up using mild italian sausage for this because I couldn't find turkey sausage. I used fresh spinach and sauted it with the sausage because I had it on hand and added some red wine as another user suggested. It was fantastic! My DH raved about it and is already plotting when we can make it again.

Roasted Brussels Sprouts

Tacos in Pasta Shells

We loved these! They were a great compromise between my husband's love of mexican and my love of pasta. I followed some other reviewer's advice and cooked the ground beef with about 2 tablespoons of the Taco Seasoning I from this site, a diced onion and a can of green chilis. I added about 4 oz of cream cheese and followed the shell stuffing directions per recipe. I did put taco sauce on the bottom of the pan and I think it helped keep them moist. I topped them with a mild corn and black bean salsa and cheese and baked covered per directions and then uncovered for about 5 minutes to let the cheese melt. We put sour cream, hot sauce, diced avocado, black olives and diced tomatoes on top and it was delicious. I think you could use whatever you have in your pantry and make this dish a hit!

Annie's Fruit Salsa and Cinnamon Chips

This was fantastic! I'd had something similar before, and it was everything I was hoping for. I will say that I don't think the time listed for the recipe takes chopping time into account. I ended up doubling the amount of chips that I made, and because I made sure to only put a single layer on the pan, it took me a couple of hours to make two batches. It was well worth it though. I took the advice of other reviewers and shook them in a big bag with the cinnamon sugar and it seemed to work well. As for the salsa, I made it twice in two days. The first time, I followed the recipe exactly. I tried using my egg slicer for the kiwi and ended up breaking the slicer. I just cut everything by hand, making very tiny pieces because it needs to fit on a chip. It turned out very pretty and everyone at my bookclub loved it and couldn't believe that I made it, especially the chips. The second time I made the salsa, it was just for my husband and I, so it didn't need to be pretty. This time, I just cut up each fruit and pulsed them in the food processor for a few seconds... so much faster!!! I added blackberries and blueberries, and didn't have anymore raspberries, but it seems to be delicious no matter what fruit you add. I will say that the addition of the blackberries kind of muddied the color, so if you are going for presentation, be cautious of that. I love this recipe and will definitely make it again.

Cranberry Pistachio Biscotti

These were fantastic! I used dried cherries instead of cranberries because it was what I had on hand. Next time, I think I might put white chocolate chips in the batter with them to avoid the hassle of dipping them in chocolate. Thanks for the great recipe!

Blooming Onion and Dipping Sauce

The onion part of this turned out really well. I had an onion cutter sitting the basement so we pulled it out and that worked very well. I did follow other's advice and put it in an ice bath for about a half hour. We used our little fryer to fry onion and I started it root side up and switched it to petal side up about half way through. The only part of the recipe that didn't come out so well was the sauce. Note that this does not call for regular horseradish. I put about a tablespoon of regular horseradish in and it was way too strong for out taste. I tried adding more ketchup to mellow out the flavor and it just ended up tasing like cocktail sauce. I would definitely try making this again, but make sure that you have cream horseradish. Buffalo Chex® Mix

I was pleasantly surprised by this recipe. I wasn't sure how it would be with all the ranch dressing, but it wasn't too overpowering. I didn't have celery seed so I added a little celery salt (not 2 tsp though). I ended up using cheddar goldfish and pretzel goldsifh and then added sea salt bagel chips as well. This was a nice change from the usual chex mix.

Quinoa Side Dish

I love this side dish. I've made it as least 3 or 4 times now. If I don't have either fresh parsley of fresh thyme, I've used dried and barely noticed the difference. I think it is better with fresh lemon juice, but I used bottled lemon juice when I don't have lemons on hand. I like my onions cooked, so I cook them in the pan before I add the quinoa. I did notice that the cook time for the quinoa seemed a little short to me. I ended up leaving it on the stove for at least 5 more minutes until it was tender and the quinoa had at least doubled in size. Thanks for the delicious recipe!

Green Beans with Almonds and Caramelized Shallots

These green beans were great. I love the hint of garlic that the shallots add. I used french cut green beans and steamed them in a pan, although next time I think I'll use steamer bags in the microwave to save time and dishes. I toasted the almonds and they added great flavor. I think next time I'll use more almonds.

Sweet Potato Oranges

These were fantastic and eveyone raved about them. I pretty much followed the recipe as this was the first time I had made these, but next time I think I would half the sugar and butter in the sweet potato filling and I think at least half the topping recipe. I made the filling two days before my dinner and then stored it in the refridgerator. On the day of, I cleaned out the oranges and then filled and baked them. It didn't seem like that much work to me at all, especially since you could do a lot of the work beforehand. Thanks for the recipe. I'll definitely make these again.

Key West Penne

I thought this was delicious and actually easier to make than I expected. We used thawed frozen sea scallops and peeled and deveined shrimp (uncooked) for this dish. I diced everything pretty small per some reviews so I could get a little of everything in every bite. I used fat free half and half to make it a little healtheir and mixed in a couple tablespoons of flour to the half and half before adding it in as I like my sauces pretty thick and creamy. Finally, I added about 4 or 5 leaves of fresh basil at the last minute because I had it on hand in the garden. I was pleasantly surprised by this recipe.... it wouldn't be too hard to have all of the ingredients on hand without making bi-weekly trips to the store. Thanks for the great recipe!

Avocado Feta Salsa

I followed the recipe accept for the items that I didn't have on hand. I used a yellow onion and dried spices in lieu of fresh to save myself a trip to the store. It was delicious, but after tasting a little, I decided to add a little pepper and a small minced jalapeno to give it a little bite. My husband couldn't wait the 6 hours to eat it! We will definitely make this recipe again!

Dawn's Candied Walnuts

These were easy and fantastic! I used mostly walnuts, but also added some almonds and pecans. I also added a dash of allspice and grated in some nutmeg as well to give it a little extra fall flavor. I made them to snack on at work and I'm not sure they are going to make it to the office. I will definitely use this recipe again and again! Update: I thought that these turned out just as intended, but after reading reviews, the sugar on mine is a bit crystalized and powdery. Instead of using the thermometer next time, I'm going to try the cold water/soft ball test to really make sure I get it right. Even if I can't figure out how to make the soft ball stage, I'll still continue making these because they are that good.

Stuffed Peppers My Way

I don't really like peppers as a general rule, but I made this recipe for my husband to use up a wealth of peppers from the garden. The feta cheese caught my eye and it was a welcome addition. He really enjoyed this recipe and I'll definitely make it again. I just ate the filling and it was delicious.

French Baguettes

I do not have a bread machine, so I followed another reviewer's suggestion about using the dough hook on my kitchen aid mixer. I've made it twice now and it's really not too hard. I love garlic bread and on a weekend when I have time to make it, would definitely choose to make this instead of going and buying some from the store. My husband loves it and has already asked me to make it again. Thanks for the post.

Caramel for Apples

I am giving this four stars because, as other reviewers mentioined, the directions lack a lot of details. I have a digital thermometer and got the sugar and corn syrup up to 234 degrees as other reviewers recommended. Then I added about a cup and a half of fat free half and half and a half cup of skim milk (because I didn't have enough half and half). I returned to a boil and boiled for about 15 minutes or until the mixture returned to 234 degrees (per other reviews). It did take on a caramel color, although it was more opaque than I thought it would be. We waited until it got to around 200 degrees and then dipped 8 large apples in it. The caramel eventually fell off the first apple, so I think next time I'd let it cool even a little less than 200 degrees. My husband did say it tasted just like Werther's candy and the apples were a hit. They did stick to the wax paper that I put them on and I will try parchement next time instead.

Greek Dip

I made this as an emergency appetizer for book club and it was a big hit. I used about a half cup of feta because I love it and also added a little mayonnaise because my favorite store bought version has a slight mayo taste. To avoid a trip to the store for sun dried tomato pesto, I attempted to make it myself. Based on another recipe from this site, I added two sun dried tomatoes (in oil), a few fresh basil leaves, a splash of balsamic vinegar, and about a half teaspoon of garlic paste. Finally, I added a splash of fat free half and half to thin it out a bit as it was very thick with the added feta. I will definitely make this again and not feel as guilty as when I eat the store bought kind.

Manicotti Shells

These worked very well! They are similar to crepe shells, but just with more egg (at least my crepe recipe). I use a smaller round pan (maybe 6 or 7" skillet) and wait until it gets hot on the burner. I like to pick it up off the burner when I am pouring the batter so that I can roll the batter around to get thin, full coverage in the pan. It takes a little practice at first. I usually find that I spray the first one and end up throwing the first one away because it never turns out well. Then, I usually don't have to spray the pan any more after that and they come off fine. I like to have the stove between medium and medium high because the process goes more quickly. You have to really watch them, but they usually start pulling away from the pan on the first side in a minute or two and are ready to be flipped. I like to at least flip them and give the second side a little color, although I don't leave them on the stove on the second side for as long. I ended up making a ricotta cheese filling, which is more of what I think of as manicotti, to go inside and I ended up with too little filling. Next time I'll double my filling recipe, but these were great and I'll definitely use this recipe again!

Cinnamon-Marshmallow Surprises

This is the most excited my husband has gotten about a recipe in a long time. He raved about these! I had older biscuits that needed to be used and saw this recipe on the photos. I also used older marshmallows that were starting to get sticky and no one knew the difference. I pretty much followed the recipe, except I only had 8 biscuits and I brushed the tops with the excess melted butter and then sprinkled with the excess cinnamon sugar. Some of them did ooze during baking, but it didn't overflow in my over. Based on the photo I saw, I did make a quick glaze to drizzle over the top with water, powdered sugar and a little butter. They were fantastic and my husband is already planning the next time we will make them!
