Artichoke & Spinach Dip Restaurant Style
I made this for a cookout and everyone really liked it. I too thought it was too bland when I tasted it before I baked it so I did add salt and some fresh cracked pepper. Also I used a whole head of roasted garlic instead of just a couple of cloves.

Sopapilla Cheesecake Pie
I made this for a mexican themed party and everyone loved it. As someone else suggested I used 3pkgs of cream cheese to make the filling a little thicker so I had to bake it about 40 minutes. Great recipe. I will definately make it again.

Roasted Garlic Zucchini and Tomatoes
This was an excellent side dish for a cookout. I made a double batch and used them to make an italian vegatable soup the next day and it was excellent. This is so versatile I may try it over pasta next time with some shrimp.
