Quick Cassoulet
This came out great. I took some ideas from a Cassoulet recipe on Taste of Home. I added cooked chopped bacon, chopped rotissere chicken and sliced mushrooms. I also used all great northern beans. I also added some chicken broth and a splash of red wine to give it some broth. The flavors were amazing and came together so quickly a traditional Cassoulet usually takes hours to make.

Teri's Dinner in a Pumpkin
My kids love this recipe. Instead of canned mushrooms I sauted fresh mushrooms w/onion and celery then browned the meat. I also added sliced water chestnuts for crunch.

Fettuccine Alfredo V
I made this for a pot luck at work and it went over really well. I kept the sauce and noodles separate and the sauce reheated very well. I did have trouble getting the sauce to thicken so I just used some flour and made a roux and it was perfect!
