Proud wife and mother of one daughter. I love cooking and it is becoming more and more of a passion in my life! Have just changed over to green living which has been a huge challenge. We are not eating anything man made and this has made a huge difference to our health in a very short time. Going back to making everything from scratch has been a great experience for me on many levels. Sometimes I find it a little frustrating because it is more time consuming but I just remind myself of the good it is doing our bodies and minds. I think that I am a good cook but would dearly love to be a great cook!
My favorite things to cook
My favorite foods are Italian, Indian and Mexican. I love to bake and make desserts but need to improve my skills a little in this area. If I was offered a dying meal it would be Italian of some description and cheesecake! I love cooking comfort foods that make people feel good.
My favorite family cooking traditions
I make a great potato salad that is asked for at any BBQ we go to. At Christmas I like to do a loin of pork with all the trimmings. My Mum raised us on hot food like indian and mexican, we both make a great pot of chili con carne. Mum's lamb neck curry is famous!
My cooking triumphs
My potato salad, bake dinners and cheesecakes. Very proud of my white chocolate cup cakes with buttercream icing. Gorgeous for big people and little people's birthdays!
My cooking tragedies
Many! My latest was when I started using organic salt. It is so much stronger than regular salt. I baked a great big tray of wonderful vegies that were so oversalted we could not eat them!

Potato Leek Soup III
Perfect for my house as well! This is very, very yummy. If you are reading this don't hesitate. I used 3 leeks and no butter as I felt the cream was enough in the calorie department. Thanks! Smiles from Australia(:

Chicken Breasts Stuffed with Perfection
I am giving myself a 3 star not the recipe itself because I think I messed it up. The receipe looks gorgeous and the ingredients are perfect for one another. I have read everybody's comments and am still at a loss to why this did not turn out as I expected. Maybe it was the quality of my ingredients? My feta was a smooth variety which is not as flavoursome as others I have used. It had no bite. Was not mad on the sundried tomartoes I used, again they were without bite. My topping was store brought cornflake crumbs which turned out horrible. Don't know what I was thinking.... I will use homemade breadcrumbs next time and not be so lazy! I might try frozen spinach as others have suggested and season my mushrooms while cooking. Never one to give up I am going to give this another go next week and try hard not to stuff it up! I am positive that it will be Perfect next time. I will let you all know how I go. Smiles from Austalia(:

Jamie's Minestrone
I have also been looking for a good minestrone soup that does not come out of a can. The can stuff really is not good for us just check out all the preservatives and additives next time you are in the supermarket. This is the minestrone for my family! The only changes I made were taking out the beans and zucchini. I replaced with sweet yellow capsicum and some fresh corn. This soup is super tasty and very I will continue to make this for a very long time. Thanks Jamie! Smiles from Australia(:
