Flourless Peanut Butter Cookies
This is a great recipe for people avoiding flour. My son can't have gluten so these are a perfect and easy treat to make. I have made these a couple times now. The first time I went by the recipe and they are good. But the recipe doesn't make enough and they wanted to crumble a bit. So the second time I made them I used 1 1/2 cups white sugar, 1/2 brown sugar, 2 cups peanut butter, and 3 eggs. The extra egg helps hold it together as someone suggested it might in an earlier review. These were better. Perhaps next time I will use crunchy PB instead of creamy for an added texture. Great starter recipe thanks...I'm rating this one on the first time I made them.

Zucchini Pancakes
I was looking for a recipe to get my picky three year old to eat his veggies. This was it! I have to admit I changed it a little but I am rating the texture,ease, and adaptability. I did add some cinnamon and a little bit more sugar. Also I added some chocolate chips. And this last time, a little more flour because I didn't take the extra water out of the grated zucchini. I think it helps to squeeze out some of the water from the zucchini after grating it in the food processor. I can make a batch and freeze them for easy quick and healthy breakfasts for him. They turn out so fluffy and yummy! Thanks for the great recipe.

Simple Salisbury Steak
We didn't really like the texture of the meat. It was too mushy. I almost left the soup out of the meat mixture...and i wish i had. I would have added more bread crumbs as others suggested but i ran out so i used up what i had, which was almost a full cup. I managed to keep the patties together but the texture was weird. Not what i want in my salisbury steak. I will keep looking for a recipe i like.
