Slow Cooker Thai Pork with Peppers

Easy Arugula Salad

Cheesy Nacho Bake

A big hit with the family! I added a small can of diced green chilies for some extra flavor, but otherwise stuck to the recipe. The bottom layer of chips does get soggy but you can spread it in one layer in a 10x15 pan if you want it crispy.

Gravy Baked Pork Chops

Too much liquid and it was too thin - next time I would skip the milk and water or use less than a full can of soup. Based on reviews that it's too bland, I also added thyme and minced onion to the soup mixture and more seasoning to the pork chops.

Onion Barley Casserole

Great way to cook barley! I substituted leek for the green onion and used fresh mushrooms because that's what I had on hand, sauteeing them along with the barley before adding the broth.

Wilted Spinach

This was good. Based on earlier reviews, I doubled the amount of spinach to serve 4 people. Only needed a couple tablespoons of the dressing (and probably could have just used a balsamic vinaigrette). Definitely top with Feta cheese!

Farmer's Market Vegetarian Quesadillas

These were really good. Even my husband who was skeptical of the vegetable filling liked them. I do find it easier to put the ingredients on half of one tortilla and then fold it over, rather than trying to flip a full-size filled tortilla.

Lemon Pepper Zucchini

I adjusted the butter and lemon pepper according to my amount of zucchini. It turned out OK but could have used a little more zip from garlic salt or Parmesan cheese as other reviewers have suggested. Definitely best eaten hot/warm.

Beer Cheese Soup VI

I used half sharp white Cheddar and half medium yellow Cheddar. It was a bit bland, so next time I would use all sharp Cheddar and maybe add a bit more mustard and maybe some garlic. Used about 8 oz. of Bass Ale, which was plenty of beer flavor for most of us.

Won Ton Wrapper Appetizers

Definitely cook the sausage first. I used about 3/4 cup of ranch dressing and substituted chopped red pepper for the olives - we don't all care for olives and the red pepper added some nice color.
