Lemon Pepper Zucchini

I adjusted the butter and lemon pepper according to my amount of zucchini. It turned out OK but could have used a little more zip from garlic salt or Parmesan cheese as other reviewers have suggested. Definitely best eaten hot/warm.

Beer Cheese Soup VI

I used half sharp white Cheddar and half medium yellow Cheddar. It was a bit bland, so next time I would use all sharp Cheddar and maybe add a bit more mustard and maybe some garlic. Used about 8 oz. of Bass Ale, which was plenty of beer flavor for most of us.

This was pronounced a "keeper" recipe by most of the family. Next time I would sub sour cream for the mayonnaise to make it less sweet, but that's the only change I would make.

Definitely cook the sausage first. I used about 3/4 cup of ranch dressing and substituted chopped red pepper for the olives - we don't all care for olives and the red pepper added some nice color.

Vini's Pork Roast

Good flavor, although I had to sub rosemary for the caraway seed so will try again with caraway. I followed reviewers' suggestions and cut the salt to 1/2 tsp. Used beef broth instead of water in the gravy for more flavor since I didn't have browning sauce. Would definitely make this again!

Mashed Potato Soup

This was OK. Not a lot of flavor, even though I added some garlic with the onion and served with shredded Cheddar cheese and bacon. I doubled the recipe to 6 servings but even holding back the milk to 3 cups I thought it was too thin.

Turkey Tenderloins

I was only able to marinate the turkey for about 45 minutes but it still had good flavor. Only needed about 18 minutes cooking time - either my tenderloins were small or my broiler cooks fast. We all liked this!

Bok Choy, Carrots and Green Beans

I subbed sesame oil for the peanut oil and garlic for the shallot, just what I had on hand. It was a little bland - maybe a dash of red pepper flakes would have helped. Still it was colorful and everyone liked it.

This was a tad too tangy or maybe bitter for our liking. I would make it again next time I had an eggplant to use up, either scraping out the eggplant seeds and/or using less lemon juice.

Sesame Parmesan Zucchini

This is really good! I did cut the olive oil to 1 Tbsp. and used yellow summer squash instead of zucchini. Mine cooked in about 15 minutes. Great flavor!

Tangy Pork Chops with Vegetables

We enjoyed this! The peppers mellow a little bit as they cook but still have good flavor. My pork chops were thin-cut so they cooked in about 20 minutes. I'll definitely make this again.
