Slow Cooker Thai Pork with Peppers
The family proclaimed this "excellent". I made it as written. I do use low sodium soy sauce and chicken broth.

Easy Arugula Salad
Good salad! The dressing tones down the peppery taste of the arugula a bit. I did toast the pine nuts.

Cheesy Nacho Bake
A big hit with the family! I added a small can of diced green chilies for some extra flavor, but otherwise stuck to the recipe. The bottom layer of chips does get soggy but you can spread it in one layer in a 10x15 pan if you want it crispy.
