Naan

My fiance and I are HUGE Indian cuisine fans and this recipe has become one of our trademarks. We love making Naan together on rainy days!! We make it as it (except we use a buttered up skillet instead of a grill). Highly recommend this bread to make a truly authentic yummy meal that even my country-livin' meat and potatoes lovin' relatives loved!!

Soft and Chewy Peanut Butter Cookies

These cookies WERE incredible! I added an additional 1/4c peanut butter. I also put the dough in the fridge for 30 minutes before baking and rolled the dough balls in sugar. Yummy!!

Lentil Loaf

I was looking for a high-protein vegetarian dish and this was definitely it! I added and sauted 1/2 onion, 1 carrot and 2 celery stalks; also 1 additional egg and a bit more broth. As a result I let it bake for 7-10 minutes longer. Very tasty (and healthy)!!

Saucy Beef and Vegetable Casserole

My fiance and I found this recipe when we were finishing up school in Fort Worth, TX and so it has the name "Cowtown Casserole" in our household. It's delicious! I made some vegetarian-friendly changes: (1) morningstar farms crumbles cooked with 1/2c water and packet taco seasonings; (2)added sage, garlic powder and greek seasoning along with the marjoram; (3) 3/4c GREEN salsa; (4)added peas and carrots to the corn; (5) as I was worried about the overwhelming amount of tomato-y based ingredients, I opted for a few Tbsps tomato paste and a can of brothy non-tomoato soup (I used Amy's pasta and vegetable) instead of the condensed tomato soup. Finally, the extra ingredients upped the cook time to approx. 40 minutes. The result was a recipe we make again and again!!

Chili-Lime Chicken Kabobs

This was exactly the summer-time grilling out recipe I was looking for! For a vegetarian alternative I used the marinade for mango, pinapple, bell peppers, mushrooms, tomatoes and morningstar farms grillers 'chicken' strips. Loved it!!

Veggie Pot Pie

ATTENTION!! Before you make this be sure you take note that it takes (at least) 4 Tblsps cornstarch!!! (otherwise you get a tasty breaded veggie soup)! Other than that---VERY tasty!!

This was very good, but a little bland. I added sage, peas and brocolli but next time will experiment further to add a bit of flavor. Needs a little work, but definite potential here!!

Zucchini Bread II

I opted to make the recipe healthier for my cholesterol battling mother and so made the following changes: (1) egg beaters; (2) 1/2c applesauce, 1/4c oil; (3) 1c raisins (at least, love raisins in bread!!); (4) added nutmeg and allspice; (5) pecans instead of walnuts (fiance allergy)...the result? A very tasty health(ier) treat!!

New England Potato Soup

Wow!! SO delicious!! I made the following changes: (1) cooking spray instead of butter; (2) substituted veggie broth; (3) used 5 small-ish golden potatoes; (4) added sage; (5) 1c lite soy milk and 1.5c non-dairy cream substitute; (6) no ham; (7) added carrots and brocolli to the original onion/celery saute; (8) after combining the saute to the boiled potatoes and spices I took about 1/3 of the mixture out, pureed it in the food processor and added it back to the pot. All of this = one of my favorite recipes!!

Yeast Dumplings

I had never made dumplings before but I love cooking bread with yeast so I tried these out and they were a HUGE hit! I'm a vegetarian so I substituted veggie broth and opted for egg beaters too. I was confused about the 'cut into strips' direction as it seemed they'd be very large so I cut them into 2" by 2" squares. I made potato soup to go along with them and ended up with a big time crowd pleaser!!

Martian Cookies

I loved the name of these cookies and the accompanying story, but unfortunately the cookies did not come out well. I only used 1/2 c sugar and they still turned out WAY TOO sweet!! I would not make these again, but if I did, I'd exclude the butterscotch chips as they were simply overwhelming.
