Vegetarian Meatloaf with Vegetables
The ultimate question is "Will my meat eating husband eat it?" The answer is "Yes...and ask for seconds." Other than that, all was good as is. I used a non-stick loaf pan to create the loaf and then turned it upside down so it fell into the baking dish already formed in a loaf! Easy way to create the right shape...and it stayed that way and did not break apart until the second day of leftovers when there was only a little bit left. Thanks!

Greek Chicken Pasta
After reading other reviewers suggestions, I used only the marinade from the artichokes to saute the garlic, onions, and chicken. In addtion, I also used a can of diced tomotoes NOT drained. I added sundried tomoatoes and kalamata olives for a little more "zing" to the dish. I tried using whole wheat pasta as well to make it a little more healthy, but the next time I will use regular pasta...it just goes better with this type of flavor. But there will be a next time. Thanks to everyone for their suggestions! I'm learning to cook using recipes from this website and comments from other users almost without any help from anywhere else!

Butternut Squash Risotto
I am NOT a chef and this was simple and wonderful! I used 5 veggie bullion cubes to 4 cups of water and used almost all of it. I had read the previous reviews and thought a stronger stock/bullion might work well and it turned out fantastic! My husband who loves to eat meat was perfectly satisfied with this vegetarian version. I will definitely cook again!
