I'm a busy mom of 3 with a full time job and little time for cooking. I'm always looking for a good quick fix recipe that is healthy, colorful, and imaginitive.
My favorite things to cook
I love anything with a big spinach salad. I like my food clean and simple like a seared tuna steak or a tilapia fish taco with pico de gallo and cabbage slaw. YUM!!!
My favorite family cooking traditions
No matter what we're cooking or what the occasion, my mom and I usually have a mimosa in hand!
My cooking triumphs
I did my first Thanksgiving for 10 people last year on my own. It took 3 days to prepare, and was over in about 30 minutes!
My cooking tragedies
I play "chemistry kitchen" a lot and there are definitely some flops, but that's when I've learned the most. It might take a dozen tries to make the perfect spice cake, but at least I learned 11 ways not to make a spice cake.

Dee's Roast Pork for Tacos
One word, LEGIT. This is exactly what I was looking for in a pulled pork recipe. I wanted to try it in the oven, but I threw it in the crockpot before work instead and it was perfect by the time I got home. Next time I'll cook it in the oven, and I'll try it with a beef roast. I have a feeling you can't go wrong with this one. AWESOME

Soft Oatmeal Cookies
I was looking for the Quaker Oatmeal Cookie recipe that you usually find on the inside lid of the container. I bought store brand oats though, so I checked here for something comparable. I think this recipe is almost identical and it was exactly what I wanted. The only thing I changed was I added a cup of chocolate chips. I didn't chill the dough or flatten it with a fork and they turned out great. Thanks for posting this recipe.

Sugar Cookie Cutouts
AWESOME. I followed the recipe exactly and they're delish. I will frost them tomorrow, but they are perfect as is.
