About this Cook
I am a nurse and have always (until recently) had a very busy schedule. Meal times have been hectic and quich and easy have become my middle names. Comfort food and pies seem to be what I do best, but I'm not afraid to try something new.

PIES! I love to bake. I especially love holiday foods. Cornbread Dressing (we don't call it stuffing where I'm from), Sweet Potato Casserole, Buttermilk, Chocolate, Pecan, Coconut Cream and Peanutbutter pies, Biscuits with sausage gravy, Peach Cobbler,Chicken & Dumplings and Chicken Enchiladas
My favorite family cooking traditions
I love my mother's holiday candies...they're a tradition. And my bf's grandmother's homemade rolls are a new tradition.

I learned to make bread from scratch and it was actually edible!

O'Brian's Potato Casserole
I made this dish to go with Amish Meatloaf and it was a hit. I used O'Brien Hashbrowns because that's what I had in the freezer. I also used cream of mushroom soup with roasted garlic and accidentally omitted half the butter. I topped it with crushed Town House crackers because I was out of cornflakes.Make sure you thaw the potatoes first because it will take longer to bake them if they are frozen. My family liked it very much and my bf had the small amount that was left over for breakfast. Thanks for sharing this recipe! I'll make it again, it was yummy!

Amish Meatloaf
I read the reviews of this recipe and noted that a lot of them said it was too sweet. I made it as written, however. I found the meat very yummy. My bf and thought the glaze was too sweet and scraped most of it off. Our two girls (one of which informed me she doesn't like meatloaf)LOVED it and kept saying it was awesome. It was even better left over. I will absolutely make it again, but will cut the brown sugar in the glaze way back. Thanks for sharing this tasty recipe!

Black Magic Cake
I was looking for a chocolate cake like my mother's ( lost the recipe a couple of years ago). I was comfortable with the thin batter because my mom's was very thin, so I wasn't concerned with the result. The cake baked up very moist, dark and chocolatey. I topped it with Whipped Cream Icing. It was super yummy! I work as a 911 dispatcher and took it to the office for a co-worker's birthday. One deputy had a piece and soon they were all there. There wasn't a crumb left! Thanks for the recipe, Marsha. This is now the only chocolate cake for me. It reminds me of my mom's.
