My name is Lindsey. I am a makeup artist, a wife and a mama. I love to cook, I just seem to get the timing all wrong when making multiple dishes... I'm getting better every day though. I really didn't do much cooking before I was married, I would just grab a piece of fruit or heat up some mashed potatoes... you know, college food. I would bake alot though... my roommate would come out of her room at 4am and find me in the middle of making cupcakes or cookies or some other delicious dessert. I am a great baker... general cooking... I'm getting better. My husband and I were married in '07, we have a beautiful baby girl named Aliyah. Now that I have a family, I am trying to have a healthy dinner on the table every night... or most nights.
My favorite things to cook
I love to bake. I never mess up when I'm baking. I like to cook things in the oven... casseroles, lasagna, dishes that don't need constant attention. The constant attention dishes... the ones that constantly need to be stirred are the ones that I mess up on.
My favorite family cooking traditions
We don't have any cooking traditions... that would be the reason for my poor cooking skills.
My cooking triumphs
Every time I make a dish and my husband says he likes it (hes honest which sometimes I wish he wasn't) is a triumph. I recently made the most AMAZING pumpkin pie I've ever had though, so I'm pretty excited about that.
My cooking tragedies
ugh... well when we first got married... I mean the first night back from our honeymoon... my husband wanted baked potatoes. At that point I was COMPLETELY clueless on the whole cooking thing. We didn't have like a cooking sheet or a skillet to put in the oven. No tin foil either so I figured I could just put them in a pot and put the top on it and that would work out... no water, just potatoes. Needless to say it didn't. They ate the Teflon off the bottom of the pan and completely burnt. It was terrible... I cried so hard. I am not ashamed to use the microwave now.

Apple Turnovers
This is a great recipe. I used only 3 large apples and a bit less sugar. I also used homemade puff pastry. I really thinned out the glaze and brushed just a tiny bit over so it would give the pastry a sweet taste and a slight sheen. I served them hot out of the oven with a scoop of vanilla ice cream. Everyone loved them!

Burrito Pie
OMG THIS IS SOOOOOOO GOOD. I used 10 oz of enchilada sauce and 1 cup of chunky hot salsa in place of the taco sauce. I did not mix in the beans, I spread them on each tortilla. I split the recipe and did half in a decorative round pan and half in a disposable deep dish pie pan that I put in the freezer. Everyone loved it, especially with a salad on the side, a little salsa and sour cream on top!

Enchilada Stuffed Shells
I searched for this recipe, my sister in law made something similar for my hubby when he lived with her for a couple of years (shes kinda a mother to him and she can do no wrong) well, he said mine was better... mine also had 1/2 the fat because I used ground turkey without telling him :)... wow i never realized how good ground turkey would be, tastes just like ground beef he didn't even know the difference. It is also 1.50 a lb in the freezer section which is a huge plus! I used a full can of refried beans and mixed them with the meat mixture to make it more simple.... I also added a tsp of chile powder. I used a cookie dough scoop to fill the shells and it made it REALLY FAST and easy. Make sure you cover the dish when you bake it so the shells don't get tough. Fyi if you do decide to do extra beans (i recommend it) cook extra shells because you will have extra filling. It freezes really well too! Its great with a dollop of sour cream and some salsa... take a scoop of lettuce and a whole bite of stuffed shells and it tastes like the best tacos you've ever had!
