It's about time someone else did the cooking!
About this Cook
An aspect of my childhood was Sunday dinners in our California patio, with extended family dinners and lots of Italian food. Born into a family where Italian was spoken in the home, I come complete with a caste iron stomach, a hankering for spicy food and a inclination to set a table with good food, good friends and good conversation.

Anything that they'll eat and that causes a general roar of approval.

Penne Pasta with Veggies
Excellent annd reasonably health.. What I did different: Bacon instead of prosciutto, I added 1cup of diced red onions, 2cups of sliced mushrooms, skipped the brocolli and drained the oil marinade from the sun-dried tomatoes and used that to saute the garlic, bacon and tomatoes. Also added a tsp of ground, dried rosemary and 2 tsp of dried oregano. Rave reviews from the adoring fans at the dinner table...

Gary's Stuffed Mushrooms
The taste was exceptional, but the presentation on the plate was extraordinary: Very impressive. What I did different: cut the butter back to 2 Tblsp and used it to saute 4 cloves of minced garlic and 1/3 cup minced red onions, to which I added a 12oz chub of sausage. Sauted until sausage was cooked and broken up. Did not drain away fat and added the whole thing to the stuffing mix. Used 14 large, 3 inch diameter bella mushrooms and had plenty of stuffing. I served these as a side dish, but they could be the main course, they're that good.

Apple Raisin French Toast Strata
Boy, did I score the attaboys on this one. What I did different: Used lots more apples -- about 2.5 cups total. Added 1/2 cup golden raisins, and together with the increased apples, the amount of fruit seemed just right. There's just something about butter, warm fruit and maple syrup...Used a 1 lb loaf of "Cinnabon" brand bread. If you make this, you will forever be regarded as the world's best cook... And it is so EZ!!!
