Chocolate Toffee Cookies II
I prefer a softer cookie, so at first I did not care for these. I put them in tupperware and tried them again the next day, however, and I couldn't stop eating them! They were the Perfect consistency!!! If you prefer softer cookies, I would suggest making them a day ahead! I did not have any rum, so I doubled the vanilla- didn't miss it!

Garlicky Baked Butternut Squash
Wow!! Didn't change a thing. I also didn't miss all the cream butter and sugar in the other recipes.

Chicken Enchiladas V
These were amazing. I made them for a dinner party last night and we are still talking about them today! (Although I accidentally left out the green chiles-oops!) So I put them in a serving bowl to put on top. I also cooked the chicken in salsa and put all the "cooked salsa" in with the chicken mixture.
