Very happily married,a late in life mama to a beautiful 2 yr old daughter and 4 stepchildren (25,23,4 &3) and I also have 3 sweet goldens and an orange tabby.I am busy with F/T work,P/T college student & active in church. I don't have a great deal of free time :)
My favorite things to cook
My family loves to eat so that makes it makes it fun to try new things. I am focusing on being more budget conscientious as well as incorporating a more healthful repertiore of vegetables & fruit in our diet. My husband thinks my best meals are the ones that I just "create" from what is in the fridge & pantry.
My favorite family cooking traditions
Weekends are when I really have more time to put a great meal on the table. I enjoy cooking and baking based on the seasons of the year.
My cooking triumphs
I haven't burned the house down yet!
My cooking tragedies
The most horrific recipe that comes to mind was a gingerbread cake that was bitter from too much baking soda and salt. I've had as many failures as triumphs and I'm lucky my husband is such a great sport about eating the misadventures.

Lentil Soup
My meat eating husband really liked it, although he said it would have been a 5 star if I had added meat to it. My 5 year old gobbled it up. I doubled the diced vegetables and spices and used 4 cans of chicken broth. I served it with a bit of balsamic vinegar and parmesan cheese in each bowl. with corn muffins on the side. It was very filling. The recipe makes a lot, there was enough that I now have 2 more dinners ready to go in the freezer for a family of 4.

Root Beer Pork Chops
A keeper! My husband and I made this for my mother visiting from out of state. I did use a tsp of the chipotle tabasco sauce and I still felt it could have used a little more kick but my Mom thought it was perfect as I had made it, a good balance.

Michelle's Coconut Chicken Curry
I gave this an overall 3 because my husband loved it. I thought it was "ok" a little on the bland side I too made it exactly as needed. It needs a little doctoring up as the other reviews suggested. It's two biggest advantages are that it's super quick and easy and it also tastes even better the next day.
