Magic Marshmallow Puffs

AMAZING! Like a cinamon roll. I only needed half of the butter called for. I cannot stress the importance of making sure these guys are sealed up all the way! You get a big sticky mess to clean up. Unfortunately, I didn't have the ingredients to make the topping, but rolled the marshmallows in the butter, then sugar, then pecans. I'm sure the topping makes these puffs even better!

Jalapeno Chicken II

This was delicious! I marinated the chicken also in lemon juice and seasonings. I didn't use bacon. Instead, I dipped the chicken in breadcrumbs and baked at 400 for 25 minutes and they were perfect! Don't forget to wear gloves when seeding the peppers!!!

Banana Muffins with a Crunch

I also used 2 c white flour and 1 c whole wheat flour, and 1/2 c white sugar and 1/4 brown sugar. These tasted amazing! I didn't really care for the granola, and the coconut made the muffin way too sweet for me. Next time, I will just double the walnuts.

Braised Rabbit

This smelled amazing while cooking! I didn't have any chicken stock, but I substituted it for 1 c vegetable stock and 1 c red wine. This was the first time ever eating or cooking rabbit, and this was a super easy and tasty recipe to start out with! Rabbit tasted like a refined combination of pork and chicken.

Irish Whiskey Flat Iron Steak

I'm sure this is more stars had I been able to marinate the steak longer. I used 5 spoonfuls of olive oil, (canadian) whiskey, and soy sauce. I pan-fried for 4 minutes on each side for a medium steak -- delicious!

Hot Dog Roll Up

This is great! A better alternative to hot dog buns. I use spinach flavored wraps, something I usually have on hand. This couldn't be simplier for a lunch!

Corn Dog Muffins

Great recipe! Perfect "corn dog" taste! Loved the brown sugar addition. Since hot dogs don't come in packs of 9, I cut the recipe down to 5 hot dogs, cut lengthwise and then in pieces. I mixed the egg and milk in a large bowl. Then added the brown sugar and 1 box of Jiffy corn muffin mix. I added 1/2 c shredded cheese and the hot dogs. I poured the entire mixture in a lined 12-muffin tin. After turning golden brown (temerature and time as recipe), I broiled them on low for an additional 5 minutes. These were addicting!!!

Almond-Crusted Tilapia

Great recipe, since I happened to have most of the ingredients on hand. I decided to bake my dish, like a few other reviewers. Next time, I broil the fish and use only 1/2 cup parmesan and 1/2 breadcrumbs. Believe it or not, it was just too "parmesan-y" for me.

Breakfast Quiches to Go

This was GREAT! Simple to make and easy to heat up, grab, and go in the mornings. I used fresh spinach (sauteed in olive oil and fresh garlic), bacon, and left out the onion. I also used baking cups to make it really mess free and easy. Nothing could be better in the morning!

Salmon with Dill

I was a little hesitant because this recipe looked so easy. It turned out to be AMAZING. I added Creamy Dill Dip (found on this website) to the top, and it was perfect! Salmon was done in 12 minutes perfectly. Served with a salad and wild rice.

Seven Layer Taco Dip

I've loved this Dip ever since I was a girl! I use a 9x13 pan, but it fills it to the top, so I'd recommend going a little bigger. I don't use the tomato, bell pepper, or onions in mine. Great recipe! Great snack for after school or even a light dinner!

Super Sausage Gravy
