Butternut Squash Bisque
Butternut squash soup is one of my favorite foods so I was excited to make it on my own for the first time. It turned out good but not great. DH said it tasted like carrot soup, I also used chicken base and water and it turned out too "chicken-ey". I added just a small amount of half and half at the very end but did not want to dilute the squash flavor. Next time it will be better, I wont use so many carrots and use less water. I roasted two squash at once and froze one for another batch, I will try again this weekend.

Chicken with Tomatillos and Poblanos
I found all of the fresh ingredients at the farmers market and wanted something different to try. I pulsed the tomatillos in the food processor instead of dicing them and used a chopped medium yellow onion instead of green onions. I also added about another cup of broth so it would be saucy enough to serve over rice. My DH loved it, I do not like peppers, but the chicken was good, the grown kids also loved it. It was labor intensive roasting the peppers and cooking the chicken.

Slow Cooker Split Pea Sausage Soup
This was a perfect meal for the first cold day of fall. Split pea is my DH's favorite soup and he said this was the best he had ever had. I only used 8 cups of water and used ham instead of sausage. I cooked it on low for 10 hours, the peas completely disenegrated, but it was the perfect texture. I used fresh garlic and chicken base instead of the cubes. Can't wait for leftovers at lunch tomorrow. I will be making this again and again.
