Hello fellow cooks! I'm a mommy/wife/singer/songwriter and amateur chef. I LOVE the joy of watching my family and friends munching on my delicacies! I love to cook, love trying different recipes, love comfort food (must be all those childhood memories of my grandmas and their wonderful southern cooking), and love healthy and TASTY eating! Cooking is definitely therapy for me. :)
My favorite things to cook
Pasta, veggies, poultry, fish, salads, slow-cooker, grilling, anything healthy involving fresh, whole foods and lots of wholesome flavor. Oh, and of course, anything to satisfy that sweet tooth (more like, teeth!).
My favorite family cooking traditions
Thanksgiving, Christmas Eve and Easter. So much fun and so much yum! We love to cook enough to feed an army, and feast for DAYS!
My cooking triumphs
Everytime I see my picky three year old eat something other than Goldfish crackers. HA!
My cooking tragedies
Made a batch of brownies and forgot the EGGS!!! (To this day I still have no idea HOW that happened!...) Still haven't forgiven myself yet for wasting all that beautiful chocolate... :(

Tuna Noodle Casserole from Scratch
Loved this! I increased the tuna because I didn't think 2 cans would be enough. 3 was perfect. I added half the cheese to the sauce. Oh, and there's no need to use a separate saute pan for the sauce...just toss the butter, flour, etc., in with the veggie mixture. Works great. Then at the end I topped the casserole off with the remaining cheese, followed by the bread crumbs, to which I added a 1/2 cup of almonds. Delicious! Very very pleased with the outcome...hmm, think I'll go have seconds right now, actually. :)

Laura's Unbelievable Chicken and Pasta
Not my favorite chicken and pasta dish, but it was pretty good and very easy to make. A little lacking in flavor for my taste. Next time I'd leave out the tomatoes, add some garlic, Parmesan, and perhaps broccoli and peppers. I thought it was a good place to start and has potential.
