Three Bean Soup

Great base recipe, prob. good as is to feed picky people or children. I added my own spices (1 tablespoon of chili powder plus one teaspoon cumin), which hit the spot on this wintry evening. I also pureed the softened vegetables (with the tomatoes). Those changes made the broth sing!

Quick and Easy Pancit

This recipe is too dry as is and lacked zing. So I mixed an additional 1/4 c. tamari with about 1 cup broth and 1/3 cup lemon juice. Divide that evenly between the noodles and the veggie-meat mixture. I think those modifications helped greatly.

Creamy Rice Pudding

Consistency is great if you like thick pudding. I like to add a little milk to my dish to thin it out. I reduced the sugar to 25% of what recipe calls for. Great base recipe. Easy and simple.

Greek Chicken

I only had 15 min. to marinade, but used this recipe as a basis. It was a hit! My changes were to add a generous amount of garlic powder, subbed generous amount of onion powder for onion, fresh garlic that I ran through a garlic press, and extra oregano.

Lentil Soup III

Very comforting soup, wonderful and simple. My only changes were to saute the onions for a few minutes in EVOO then add garlic and cumin for 2 more minutes. Used the entire can of tomato paste which really helped boost the flavor. Paired with a grilled cheese sandwich, this received lots of raves at dinner tonight!

Poppy Seed and Banana Muffins

Excellent. I opted to go half whole wheat, half white flour -- based on reviews complaining of dry texture. Buttermilk was used in place of milk and lemon juice. I was low on poppyseeds so used 1/6 cup instead, which I thought was perfect. Keep an eye on your oven, my batch baked in 15 minutes. I was surprised how moist these were. and just the perfect amount of sweetness. These were great with a little pat of butter on top. The recipe is a keeper.

Split Pea Soup with Rosemary

Very balanced, even though I omitted the rosemary. I reserved the bacon for garnish but used the rendered fat for sauteeing the veggies. Just before serving, I pureed the soup. Was great with a splash of half and half (although my husband preferred it plain), the crisp bacon as garnish, and a slice of bread. The flavors were just perfect, and not at all too salty.

Chicken Tava from Turkey

Quite good but recipe was altered to reduce cooking time. I browned the chicken on the stovetop for a couple of minutes on each side. I also sauteed onions on stovetop to bring out their sweetness. It only took about 30 minutes in a 350 degrees for dish to cook. Good quality tomato paste (i.e., organic) with 1 T. sugar (to cut the acidity) seemed to make what could have been a very bland dish (note the absence of spices) into a very good dish. It's really good but left me wanting something spicy at the end of the meal. I think it would be excellent to serve an Indian rice pudding afterwards.

Pollo Fajitas

Was short on time and ingredients (no lemons) but nonetheless tasted great! I doubled the vinegar b/c I could only marinate for 15 minutes. I sauteed the onions separately with a little salt and pepper. Then separately, I sauteed garlic for about a minute in some oil, chili powder, and cumin, then threw in the chicken to cook.

Homemade Banana Pudding Pie

This is the best homemade pudding my husband and I have ever tasted...but please reduce your sugar...I find 1/2 c. sugar to 2 c. whole milk provides just the perfect backdrop for the eggs and vanilla extract to show off their flavors. Oh my goodness, it is really that good!!! My husband and I also think the dish could use more pudding, so next time we will increase milk to 3 c., and adjust sugar accordingly.

Curried Honey Mustard Chicken

Love this recipe. It is a crowd pleaser -- a great intro to the world of curry. My picky 5 yr. old loved it, and my spice loving husband gave it thumbs up as well. Great with steamed rice or couscous, sweet potatoes, and bell peppers or a salad with citrus dressing.

Spinach Tomato Tortellini

Great use of spinach. The variations are endless, the sauce divine. Used half and half. Didn't have basil so added sauteed onions and freshly grated nutmeg for flavor. I think vegetarians would love this recipe as is. For the rest of us, I can imagine that bacon, pancetta or ham would send this dish over the top. Thanks to the submitter.

No Bake Fudge Cookies

Great consistency. They firmed up with just 10 min. in the freezer. My only complaint is that 2 c. sugar is too much. Even though I reduced to 1 c. sugar (and I have a sweet tooth), it was still too sweet (even though I used no sugar added organic peanut butter). Next time I will try with only 2/3 c. sugar.

Lemon Garlic Tilapia

This is the tilapia recipe I use regularly! Feel free to make it your own (i.e., add Emeril's essence, finely chopped gingerroot, crushed breadcrumbs or cracker crumbs, etc.). It's very versatile. I strongly suggest omitting the garlic when serving this dish for company or people with queasy stomachs because the garlic turns green and has a moldy appearance. I haven't tried but just realized that perhaps sauteing the garlic beforehand might solve this problem?

Creamy Hot Cocoa

Wow. Simple, delicious, and best of all, no additives or preservatives. I find that sugar and cocoa measurements can be adjusted to taste: I tried 1/2 c. sugar and 1/4 c. cocoa powder. A tad of half and half to finish gives this drink some body. My family raved over this recipe.

Sour Cream Coffee Cake III

It was quite dense for my taste...not terribly dry, but sort of like a day-old coffee cake from a cafe. (Starbucks' coffee cake is more moist.) Perhaps the flour to liquid ratio is off? The batter was very thick and hard to spread in the pan. However, the sour cream gave it a fabulous wang (I reduced the sugar by half).
