Taco Salad III
Very tasty. I left out the avacado and used French dressing instead of Catalina. I don't add the lettuce or corn chips directly to the salad because they get too soggy for leftovers.

Cakes In A Cone
Made them for my 3 year olds B-day and all the kids loved them! Easy to make and fun to decorate! Not as messy as plain cupcakes. I liked the combination of textures with the cone and cupcake. Will make again!

Eggplant Burgers
YUM! you won't want another hamburger again!It's fast,budget friendly, and absolutely delicious. I top them off with pepper-jack cheese and a mayonnaise, garlic,& dill weed dressing. They're a favorite of my husband, who is a meat-and-potatoes kind of guy!
