About this Cook
Late 20's female life-long student. Living in Athens Ga (kind of a small Charleston SC with way too many college students) for the past 4 years as I have been attending Veterinary School. Moving to Plymouth Meeting PA (North of Phily) for surgical/pathology internship. Started cooking after college (not counting assisting with holiday meals). Mom is a wonderful cook and learned from her. Had every Wednesday afternoon off pre vet school and cooked up different meals for family or friends for two years. Still manage to cook now... but time is short when at the hospital for 14 hours.
My favorite things to cook
I haven't quite mastered baking cakes as I am not a big sweets fan; I think I overdid it as a child. Do love to make flourless chocolate cake (Mom just diagnosed with Celiacs and best friend's boyfriend has it too). Love to make egg sandwiches with basil and oregano (fresh when my dogs dont eat the herbs). Like to make sauteed rice and veggies (I cant think of it as fried rice when Pam spray is used and brown rice is used). I have tapas parties a few times a year when time allows so I like making lots of different things. Although i did go a bit overboard on garlic tapas one night. No mosquito problems for a few days though.
My favorite family cooking traditions
Oyster stuffing for thanksgiving, still make it even though mom cant eat it.. it is now my job although simplest thing to make on that holiday. Cheesy pearl onions too... mmm fat grams galore. Used to like the raw oysters mom always served as an app on christmas eve... had to stop for a few years after dad and i got food poisoning.... mom gave us the bad ones cause she was fine.
My cooking triumphs
Anything with shrimp... ummm... even if i dont like something everyone else eating it does... which makes me happy so triumph. I guess the few times i have made homemade spaghetti sauce has been a triumph. Turkey stock was pretty good for a first timer that had shared many bottles of wine with friends for pre thanksgiving dinner...
My cooking tragedies
Burning my hand when trying to blenderize hot garlic soup and the top of the blender flew off... also twisting the bottom of someone else's blender off and spilling soup (red pepper soup so it looked GREAT...)... I am not allowed to use blenders anymore... have a mini cuisinart now... so will see how that goes.

Catfish Cakes
Not the biggest fan of white fish, but trying to branch out. This was great! I would especially recommend this to parents trying to get their kids to eat fish (and not as fattening as fish sticks). Made these one night with turkey cakes as well.. both were a hit... although the turkey did win.

Vidalia Casserole
Not bad, needed something extra though.. also no crackers so topped with Panko... flavor of onion was good, but nothing within recipe to bring out a new take..

Delicious Artichoke Dip
After so much fiddling with different artichoke dips, I still havent found the perfect one. there is a restaurant in SC and GA called Vickery's that has some of the BEST artichoke dip and I always compare to that one... so this is okay... but not great, and not enough artichokes!
