Mom's Turkey Sausage Patties
I made this with 1 1/2 lbs of 93% turkey. It was too spicy for me, so 2 lbs would be better (as written). Some reviewers said that it wasn't spicy enough for them. I can only say, they must like things really hot. I didn't have sage, so I used poultry seasoning. This was a nice addition. I did cook it on low/med as I didn't want it to dry out. It was moister than I thought it would be, considering the fat content. I think I'll try adding some grated apple to it and see how that works. Over all, it's a surprisingly good recipe. I am not much of a ground turkey eater, but this is pretty yummy!

Shrimp Etouffee II
This is very good. I do not use green onions, just more regular onion. I like it hot, and it's just right for us. I've made it in the microwave and on the stove top. Both ways are good, but the stove top will caramelize the veggies, which is a nice touch. I do add some water as it gets pretty thick. This is one of my go to recipes for a quick, spicy, good shrimp dish.

Homemade Hash Browns
This is a good explanation of how to make hash browns from scratch. Parboiling them first is the secret. I found that the potatoes came out just right, not underdone and not burnt to a crisp trying to get them done. I don't understand the previous reviewers comments. If you don't have the ingredients in a recipe or you don't want to follow the instructions, how can you say it's good but give it 3 stars?
