Pineapple Chicken Tenders

Reviewed: Jun. 29, 2009
Awesome recipe! I halved the sauce the first time and the next time I made it exactly as it states because it was so delish!! I added fresh pineapple chunks to the skewers and boiled the extra marinade down to use as a dipping sauce. I served it with rice and the broccoli with garlic butter and cashews recipe from this site. It's a family fave now.

Italian Spaghetti Sauce with Meatballs

Reviewed: Jan. 21, 2009
Oh my goodness!! This is a wonderful recipe. I increased the garlic, added onion powder and was out of parsley (whoops!) so I added some other spices. And, my husband won't eat cooked tomatoes so I used tomato sauce and only one 15oz can of stewed tomatoes. I know I made some changes but it was still pretty much the same general recipe. Definitely use lean meat!! I accidentally used 80/20 (didn't label it when I froze it) and it was a little greasy but still very good!! This is a keeper recipe for my family. Thanks for sharing!

Spintz Cake

Reviewed: Dec. 22, 2008
I've made this recipe a lot. It is so moist and wonderful! I have made a couple of changes after making it the first time. I add more cream to the peanut butter layer and make it in 3 pans instead of two. I also cut each cake into two layers and layer the filling in between every layer making it a six layer cake. It's magnificent!!!!!!

Great basic recipe. I added a little sour cream, some garlic and onion powder and a little Italian seasoning as well as chopped fresh spinach. My family loved them!! Thanks a bunch;)

Creamy Vegan Hot Cocoa

First of all...LOVED IT!!!!!!! But I am not a vegan nor lactose intolerant so I did substitute evaporated milk for the water. Like someone else said, it's not terribly cocoa-y but still is wonderful and yummy:)

Spicy Rapid Roast Chicken

Reviewed: Oct. 5, 2008
I have made this recipe many times before and it is wonderful!! I have also added 1/2 teaspoon of curry powder. We usually make chicken quesadillas the next night with the leftover chicken(tortillas, refried beans, mex rice, cheese and chicken--pan fried...yummy!) Super moist and flavorful and most importantly...EASY!!

Fresh Pineapple Upside Down Cake

Reviewed: Jul. 16, 2008
Just finished making this cake...WONDERFUL!!!!! However, mine did not need to bake as long as it says. I only baked mine for about 22 minutes and it was already really brown on top but I did use a cast iron skillet so maybe that's why. I had to use canned pineapple since I didn't have fresh on hand and I can only imagine how GREAT this would be with fresh pineapple! Can't wait to make it again;)

Blue Cheese Dip II

Absolutely wonderful!!!!!!!! We ate it as dip with chips first then I added more blue cheese and a little milk to thin it and ate it with buffalo wings the next night. It was even better the next night after the flavors blended. Definitely the best;)

Ramen Spinach Pasta Salad Supreme

Reviewed: Jun. 29, 2008
I gave this recipe 4 stars because we hated it the first time I made it. It was WAY too garlicy and salty plus the texture was mushy with bits of chicken and cashews. The second time I made it I read the reviews and made the according changes. I also added a few of my own changes as well... The biggest change was that I did NOT cook the noodles. I just crushed them in the bag and added to the salad raw. I also substituted sunflower seeds for the cashews. I added the chicken hot right out of the pan which wilted the spinach some. As for the dressing, I cut the garlic down to one clove and only used one flavor packet. I also added one teaspoon of red wine vinegar, one tablespoon of sugar and 1/2 teaspoon black pepper. We ate the dressing on the side...because of its intense flavor not everyone liked the same amount of dressing so some used less of it than others. With the changes I made, my hubby and I give it a 5 star rating.
