Flourless Peanut Butter Cookies

These are great. Best peanut butter cookies I've tried so far. They were a bit grainy-textured but I'll take that over the powdery, bland peanut butter cookies I've made in the past. I added a splash of vanilla.

Best Brownies

These brownies came out very nicely -- spongy and light, if that's what you're into. Even though I MUCH prefer a dense, chewy fudge brownie, I think I'll make these again. Thanks for the recipe! (By the way, I did not make the frosting.)

Best Big, Fat, Chewy Chocolate Chip Cookie

*sigh* Basically, I agree 100% with Paula's review from 8/26/09. I hate finding yet another chocolate chip cookie recipe I don't like. I'm glad 1000s of others enjoy these, though. Thanks for sharing, it was worth a try! :)

Creamy Rice Pudding

I was bored tonight & wanted to make some sort of dessert & decided on this. It's very easy, and like the title says, very creamy. Some alterations I made: I left out the raisins. I agree that it needed more sweetness so I added about a tbsp more sugar. I also added a few pinches of sweetened coconut, as well as about a tbsp & a half of cocoa powder to make it chocolaty. Yum!

This is a great recipe; I made cupcakes. I ran out of vanilla extract and used fresh lime juice instead. I grated a little lime zest into the batter as well. Yum!!

These were very easy and delicious. My only complaint was that the bottoms got very greasy, but that's probably because I used regular cream cheese & mayo, both very fatty ingredients!

Joey's Peanut Butter Cookies

These were okay. The dough as written was so incredibly sticky/wet and impossible to work with. I had to add about another 1/2 cup flour. The result made the cookies too dry/powdery for me. Which was a shame because they are also very peanut-buttery, and had I not been forced to add more flour, they would have been perfect.

Faux-reos

These cookies were fun to make and are VERY good. I imagine these would be fun to make with kids. Better than real Oreos for sure... they're on a whole different level, really. I piped on the filling w/ a freezer bag, was much easier. Oh, and definitely stick with the small, nickel-size balls of dough.

Curried Cauliflower

This is absolutely delicious and truly addicting. My boyfriend and I basically finished the whole casserole by ourselves in one night. I used Japanese bread crumbs on top (no butter), which was good, but not enough crunch. Will go by the recipe & try the crackers next time.

Stove-Top Macaroni and Cheese

This is a great quick fix for mac and cheese! I sauteed some onions with sliced hot dog and added that. I also used probably a half cup more cheese. I still prefer baked mac and cheese, but when you're in a pinch, this is so easy and very rich.

Soft Oatmeal Cookies

Humph. I don't know what went wrong with these. They COMPLETELY flattened and are not soft at all. I reduced the temp to 350 and it still happened. My baking soda is not expired, but maybe it went bad somehow? It's obviously something I did wrong, because everyone else's sound and look great. I think I'll try these again when I buy new baking soda.

Sweet Potato Gnocchi

I am a complete novice when it comes to making any kind of pasta from scratch, but this turned out great! I'm an AR photo addict but I won't be submitting a photo this time as mine didn't look very pretty! Tasted good though. I had a tough time getting the hang of forming the little gnocchi 'pillows', but I eventually got it. I used probably 1 1/2 cups of flour. They seemed quite chewy to me right after cooking, but surprisingly, they were MUCH softer & more enjoyable when I reheated leftovers. I'll definitely try making these again sometime.

Egg Drop Soup II

I had no clue how to go about making egg drop soup, so the real value of this recipe, for me, was in the method of making the soup. So thank you for that! :) The contents, however, needed a little boost. I doubled the eggs and added sesame oil, fresh grated ginger & garlic for some extra flavor. I did not have green onions, so I cut up some baby bok choy and used that. Turned out great!

Award Winning Soft Chocolate Chip Cookies

I admit I was skeptical about this recipe at first & had been eying it for months. I've had continual bad luck with chocolate chip cookie recipes and they never turn out quite right for me. The search for the perfect cookie continued until this afternoon. These are AWESOME. Don't be put off by the pudding mix... you can't even taste it. The texture of these cookies is perfect.

Baked Potato Soup I

I followed this recipe pretty closely, and WOW, it is good. I used 1% milk, lite sour cream, and turkey bacon in an effort to reduce the fat in this recipe. I was a little wary of some of the negative reviews, but I was very pleased with how this turned out. However I do agree that it was a bit bland, so I seasoned it w/ extra salt, pepper, and garlic salt. But it's still a 5-star recipe, in my opinion. I thought the proportion of "stuff" in the soup was just perfect. And the soup itself has such a smooth, silky texture. I don't need to go looking for another baked potato soup recipe. This is it!

Lime-Curry Tofu Stir-fry

GREAT recipe-- this was delicious. A few changes: 1) I used string beans instead of bell pepper because that's what I had on hand. 2) I also used cilantro instead of basil, and 3) I minced a couple cloves of garlic and stir-fried it along with the ginger and curry paste. I make coconut/curry stir fries a lot, and I never thought to use zucchini. It worked so well with the flavors in this dish. I love the "soupy"-ness of this; it reminds me of the hot pots I've had at Thai/Malaysian restaurants. Will definitely make this again.
