Easy Pancakes

I've used this recipe a few times with great results-- fluffy, light pancakes! It's a great base for all sorts of add-ins... fruit, nuts, chocolate chips... you name it!

Cream of Fresh Asparagus Soup I

This soup is SO good. I did not have dill weed or white pepper (used black instead) but it was still delicious without them. It's really good with a squeeze of lemon juice right before serving.

I really enjoy making this. I'm on a very strict budget and this really hits the spot whenever I crave the high-end coffees I used to enjoy. I like to add a couple teaspoons of chocolate syrup. I can't wait to try this in the blender next time for a "frappuccino" type drink.

Ukraine Baked Potato Salad

This was pretty good. Like other reviewers said it was pretty dry (and I added a lot of extra sour cream). When we ate it, we put a few dollops of sour cream into it and it tasted really good that way. Overall I liked the combination of potatoes, eggs, and onions, but it just needed that extra creaminess factor.

Curried Salmon Bake

Very good! I am always looking for new salmon recipes and I would never have thought to put these ingredients together. I used green curry paste, and probably quadrupled the amount. It was delicious with fresh cilantro sprinkled on top after baking.

Pumpkin Chocolate Chip Muffins

Wow! These are great! I ran out of white sugar while measuring so I used 1/2 cup white sugar + 1/4 cup light brown sugar. I added about a palmful extra chocolate chips. They are so fluffy and moist with a subtle (but definitely noticeable) pumpkin flavor. Thanks for the recipe.

Jam Muffins

Pretty good muffins! I, too, put the jam in the middle of the muffin rather than the top. I added just a touch of cinnamon & nutmeg to the batter. I also added some crumb topping made from 1tbsp softened butter, 1tbsp brown sugar, 1/2 tsp cinnamon, and 1/2 tbsp flour.

Peanut Noodles

Flourless Peanut Butter Cookies

These are great. Best peanut butter cookies I've tried so far. They were a bit grainy-textured but I'll take that over the powdery, bland peanut butter cookies I've made in the past. I added a splash of vanilla.

Best Brownies

These brownies came out very nicely -- spongy and light, if that's what you're into. Even though I MUCH prefer a dense, chewy fudge brownie, I think I'll make these again. Thanks for the recipe! (By the way, I did not make the frosting.)

Best Big, Fat, Chewy Chocolate Chip Cookie

*sigh* Basically, I agree 100% with Paula's review from 8/26/09. I hate finding yet another chocolate chip cookie recipe I don't like. I'm glad 1000s of others enjoy these, though. Thanks for sharing, it was worth a try! :)

Creamy Rice Pudding

I was bored tonight & wanted to make some sort of dessert & decided on this. It's very easy, and like the title says, very creamy. Some alterations I made: I left out the raisins. I agree that it needed more sweetness so I added about a tbsp more sugar. I also added a few pinches of sweetened coconut, as well as about a tbsp & a half of cocoa powder to make it chocolaty. Yum!

Simple White Cake

This is a great recipe; I made cupcakes. I ran out of vanilla extract and used fresh lime juice instead. I grated a little lime zest into the batter as well. Yum!!

Joey's Peanut Butter Cookies

These were okay. The dough as written was so incredibly sticky/wet and impossible to work with. I had to add about another 1/2 cup flour. The result made the cookies too dry/powdery for me. Which was a shame because they are also very peanut-buttery, and had I not been forced to add more flour, they would have been perfect.
