Baked Beans II
Good recipe. I made a few changes to make this a little lower in calories. I put 2 large cans of vegetarian beans in a crockpot on low heat. I used thin sliced center cut bacon. I then cook the onions before throwing them in with the beans. I used one-carb ketchup and Splenda brown sugar. I used a very little amount of mustard. I added in a pinch of cayenne pepper for a kick. Cooked in slow cooker for about 4 hours. Turned out wonderful. Family didn't know it was low calorie.

Banana Pudding IV
I thought this was great! I made a few changes to make this a little more low calorie. I used 1 fat-free cream cheese, 1 fat-free sweet condensed milk, 2 small packs of sugar free cream cheese pudding, 3 cups skim milk, 1 teaspoon vanilla, 1 fat-free container frozed whipped topping, 4 bananas and 1/2 pachage reduced fat vanilla wafers. I used the cream cheese pudding because I was afraid the fat-free cream cheese might be too light in flavor. Everyone at the party loved it and didn't even know it was reduced fat!

Roasted Red Potato Salad
Very nice! I made a few changes to make this a little more low calorie. I cut the red potatoes up and roasted them in the oven with garlic, salt, pepper and rosemary for 15 minutes. Then I cut up the onion and mixed it in with the potatoes and roasted for another 20 minutes. I used the eggs the same, but I used thin sliced center cut bacon. After everything cooled I used 1/2 cup fat-free mayo and 1/2 cup fat free sour cream. Very good.. even with the changes!
