Apple Butter Ham Glaze

Reviewed: Apr. 15, 2009
This was really good. It wasn't the type of glaze that carmelizes but it added terrific flavor to the ham. The ham was even more flavorful the second day. I didn't have orange juice so I used apple juice instead. Would definately make again. Also I halved the recipe for a 7 pound half ham.

Brunch Enchiladas

This was a great way to use up leftover ham and tortillas but I probably wouldn't make it again. There was nothing wrong with it, but it wasn't great!

Pineapple Upside-Down Cake VII

This is a great recipe. I made it in a 13 " cast iron skillet and soaked the pineapple in coconut rum before baking. I served it with mango ice cream for a Hawaiian party. It was a hit!!!

Southern as You Can Get Collard Greens

Reviewed: Apr. 11, 2009
This recipe is great! My husband loves it and he is from Mobile, AL. I have made this recipe a dozen times and I have adjusted it slightly. I simmer all ingredients except the greens in a slow cooker for 8 hours on low. Then I cut any meat I can off of the hocks and put it in a pot along with the greens. I pour the liquid on the greens and then simmer on the stove for an hour. Also, recipe does not need added salt. I also use 2 bunches of greens as this recipe provides plenty of liquid to cook 2 bunches.

I thought these would be a lot better than they actaully were. I was dissapointed. They weren't bad but they just didn't live up to the hype!

Ricotta Cheese Cake

Reviewed: Nov. 5, 2008
Good cake and very easy to make. This is a great way to use up extra ricotta cheese. I used almond extract instead of vanilla as others have before me. I used a stoneware bundt pan and baked it for 65 minutes. My family loves it!

I made this for a Hawaiian party. It was pretty good and served it's purpose. It is not "to die for" but I would make it again.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Sep. 19, 2008
I have been making this recipe for several years now. It is wonderful! The meat just falls off the bone. I use this recipe as a guideline for every roast chicken I make. I often switch out the seasoning but I always use the cooking method in this recipe. Don't get me wrong, there is nothing wrong with the seasoning in this recipe, I just do it for variety. My family thinks I make the best roast chicken they have ever tasted!!!

Banana Sour Cream Bread

Reviewed: Aug. 5, 2008
This banana bread is pretty good. I halved the recipe and used three 7.5 inch x 4 inch loaf pans. Some previous reviewers claimed that they had trouble getting the bread to cook all the way through. It seems like this batter yields more than stated in the recipe. I used whole milk plain yogurt instead of sour cream because I had it on hand. Next time I will try with sour cream to see if it makes the recipe better.

Sangria! Sangria!

I agree with everyone else! This is a great idiot proof recipe. I made it with cheap red wine and it was delicious. As many others did before me, I omitted the sugar and used ginger ale. I made a double batch. It looked great in my punch bowl. This recipe is a keeper for sure!
