Roasted Red Potato Salad

The potatoes took way longer than 30 minutes to cook BUT they were tasty and the clean up was a breeze. I cut the mayo with sour cream and BUT it definitely needed more of it, it was very "sticky", I also added dill, garlic powder, 2tsp of Dijon and celery. Overall, a good start but needs some tweaking.

Spaghetti Squash I

WOW! This was the first time I have ever had Spaghetti squash and it was yummy. I made a few changes. First, I poked holes in the squash and microwaved it for about 6 minutes. Then I added fresh red and green peppers to the onion and garlic saute mix and cherry tomatoes. Perfect for all of my Mom's home grown veges.

Quick Chicken Divan

I made a few changes. I boiled fresh broccoli with 1/2 a chopped onion. I also grilled the chicken on my stove with a grill pan and seasoned it with garlic salt seasoning and pepper. The flavor was good but I think next time I will reduce the soups to 1/2 can each and maybe add some chopped garlic as well. Just needed a bit more kick.

Super Grilled Salmon

I would reduce the soy sauce to 1/4 cup. It's a bit over powering. I used the "gravy" for the fish and for some steamed veges (see pic). Will make again!

Brussels Sprouts in Mustard Sauce

Mack's Tunaburgers

Yum Oh! A great alternative to a tuna sandwich. I did change it a bit. I used Veri Veri Teriyaki which is thick with a great flavor not too strong. I also added about 2T of Wasabi paste. I thought this went better with tuna than Tabasco or Mexican hot sauce. The bread crumbs I used were Italian. VERY GOOD- WILL MAKE AGAIN!

Spicy Chipotle Turkey Burgers

This was one tasty turkey burger. I added an egg to help hold it together and to keep it moist. I also added two Chile's in adobe to give it some extra kick. I served it on a ciabatta roll and it was yummy!

Cream of Cauliflower Soup II

I made this soup with an Orange Cauliflower which gave it a great light orange color. The overall flavor and texture was so yummy that my husband and I fought over who got to eat the left overs. It tasted like an unhealthy cheesy soup but it's very healthy. A++
